Hi everyone! Today I present to you a delicious and easy recipe for every day! Pan-fried chickpeas with aubergines and peppers is a totally vegetable single dish, perfect for lunch or dinner! A few simple ingredients are enough to prepare a very tasty and inexpensive meal. Anyone can do it! When you have little time to cook, this recipe is perfect! A healthy, delicious and very easy to prepare dish! Try this delicious and quick recipe of chickpeas with aubergines and peppers in a pan and I'm sure you will like it!
Ingredients:
- 1 eggplant
- 1 onion
- 2 cloves of garlic
- 5 small peppers or 1 large
- 1 leek (optional)
- 1 tomato
- 450 g of chickpeas
- 150 ml of tomato puree
- Parsley
- Salt, pepper, paprika, chilli
- Olive oil
