Hi everyone! Today I offer you 3 delicious pasta recipes with eggplants! The first recipe is linguine in cream cheese with fried aubergines and cherry tomatoes. my family loves this delicious pasta and I make it very often! the second recipe is penne with pesto, aubergines and bacon. If you want to pleasantly surprise your guests, this recipe is perfect for you as it is easy and very tasty! The last recipe is half rigatoni in aubergine cream, very simple and delicious! Perfect recipe for lunch or dinner when you don't have much time to cook.

- - 1 eggplant
- 250 g of pasta
- 15 cherry tomatoes
- 80 g of pecorino or parmesan
- Milk to taste
- Salt and pepper
- 1 hot pepper
- 1 clove of garlic
- Parsley
- Olive oil

- 250 g of pasta (penne rigate)
- 1 eggplant
- 1 clove of garlic
- 1 hot pepper
- 50-60 g of bacon
- 40-50 g of Parmesan
- A handful of basil
- 25 ml of olive oil
- 25ml of water

- 2 eggplants
- 40 g of pine nuts
- 40 g of Parmesan
- 2 cloves of garlic
- 10 basil leaves
