Hi everyone! Today I present to you a very tasty and easy to prepare pasta recipe! Aubergine carbonara with hard-boiled eggs is a first course, perfect for lunch or dinner. Your family will love this delicious pasta! For this recipe I used rigatoni, but you can use any other type of pasta you prefer. I also propose an excellent solution for not throwing away the egg whites, given that only the yolks are needed for the pasta. I recommend you try this delicious and easy eggplant carbonara recipe and let me know what you think in the comments!
ingredients:
- 4 eggs
- 1 eggplant
- 1 onion
- 250 g (9 oz) rigatoni pasta
- 50 g (2 oz) of parmesan or pecorino
- Salt and pepper
For the stuffed egg whites:
- 3 cherry tomatoes
- 1 tablespoon of cooked eggplant
- Parsley
- 2 spoons of mayonnaise
- 1 clove of garlic
- Salt and pepper

Mi piace cucinare e sono abbastanza brava, in genere non seguo molto i siti , i bloggers mi piace inventare, Quando mi sono imbattuta in questa ricetta l'ho trovata particolare un abbinamento, quello delle melanzane, che adoro, e dell'uovo con formaggio a cui non avevo pensato, mi ha incuriosita e l'ho provata seguendo fedelmente, passo passo la preparazione anche delle uova ripiene e devo dire e' stato un successo, piaciuta a tutta la famiglia e tutti l'abbiamo trovata delicata ma al tempo stesso particolare, le uova poi sono veramente delizione. Mi e' piaciuta talmente che mi sono iscritta al suo canale, e consinuero' a seguire le sue ricette anzi ne ho gia' identificate altre che voglio provare.

Sou do Brasil! Tenho um truquezinho para descascar ovos: ao retirar da água quente, coloque na água gelada, assim que esfriar, esfregue nas mãos, dê uma batidinha numa superfície, mesa, por exemplo, depois esfregue novamente nas mãos, a casca saia com facilidade!
