Macaroni with Fresh Ricotta, Basil, and Lemon Zest - Quick and Easy Recipe

  • A super quick recipe that you can make anytime when you don't feel like spending hours in the kitchen!
    I love improvising and always inventing new, tasty recipes...and here it is: macaroni with fresh ricotta... superb!
    I recommend trying it by substituting Basil with fresh Mint... truly exceptional!
    Ingredients:
    160g of macaroni
    Approx. 250g of fresh goat ricotta
    4 basil leaves + 1 optional for garnish
    Half a lemon
    Extra virgin olive oil (EVO) to taste
    Salt and pepper to taste
    Method:
    Bring a pot of water to a boil, add the pasta, and while it cooks, prepare the sauce:
    On a plate, place the fresh ricotta, which you will have previously mashed with a fork and a drizzle of EVO oil;
    Then add 2 torn basil leaves, a pinch of salt, and a grind of fresh pepper;
    Finally, grate the zest of half a lemon and mix everything together.
    When the pasta is cooked, combine it with the sauce, plate it, and if desired, garnish with a basil leaf and a drizzle of raw EVO oil.
    Tips:
    This dish can be made both in summer and winter, so you can enjoy it either "cold" or "hot."
    In the first case, just follow the recipe (we made it when it was starting to get a bit warm), while if you want it a bit "warmer," simply add half a ladle of boiling cooking water to the ricotta and other ingredients, or sauté the pasta in a pan with the sauce!
