Here in the UK the bridging of safety critical devices ( low pressure or any over temperature components) would be deemed immediately dangerous and as a registered installer I am required by law to rectify the issue before the appliance can continue to be used.
If the customer refused, then, with the customers consent I am required to isolate the appliance and issue a warning notice. In the event of the customer refusing I'm required to contact the Gas transporter, who are required by law to attend within 2 hours and theywould disconnect and cap the appliance and issue a prohibition notice!
This system makes every one safe and puts the responsibility on the customer.

Just saying, if it were me, I would've taken that service sticker off, if that boiler were to catch fire or blow up, I wouldn't want my name associated with that non complaint boiler. Love your content though, I'm just learning and your videos help a lot.

Mike, it is very sad that they would not let you install a low water cut off, they don't understand it is a safety and is code for a reason. I Wish you had the power to red tag and shut the boiler off. I red tag and turn off boilers a lot working for the gas company. People are so stupid. Also, Mike I have heard that answer before from people, Well it has been this way for 8 years, then I always answer, well that doesn't mean it is right. Love the videos.

Hope they have CO detectors in the house, with 57PPM on the CO. Seems a bit high to leave it like that.
In the UK, 200ppm Co is deemed a safe maximum. 57 ppm is pretty much what I'd expect on that type of boiler assuming flue operation is satisfactory ,no issues.

So just to recap. The system was leaking water in more than one place that we know of when you got there, you fixed the obvious issues yet I saw a few questionable connections (on a 7 year old furnace), but having a working safety (low water cut off valve) would cost a relatively low number to insure a level of safety when the next thing fails-or causes an explosion 💥 was too much to spend??? I guess if the house burns down the insurance company will be glad you posted this video when they deny the claim. I don’t know your rules up there and you don’t seem like someone to really F with people for no reason, but I have seen HVAC contractors here just condemn a system and disable it being used until it is operating with all safety issues repaired. I can only imagine that video with you!! Easy to do. Just turn off the gas, get it on video and leave. If they turn it back on that’s on them. But you may save their life. What if the exhaust damper was not operating?? Oh I guess they might consider spending money to fix that because they understand exhaust gas in the house. Good video Mikey. I guess I just have little patience for stupidity-you are the expert, they obviously could not fix the other issues or they would have. ..as you always end you videos “stay safe” !! God Bless!!
