- Katsu curry is a staple in Japanese cuisine and is incredibly easy to make at home. This Japanese-style curry is more sauce-focused and served alongside either a cutlet (katsu) of chicken or pork. In this katsu curry recipe, the katsu is chicken to make it more accessible and cheaper. Please enjoy.

2 - Large Chicken Breasts, Butterflied & Halved
2 - Large Eggs
1 tsp - Onion Powder
1 tsp - Garlic Powder
2 Tbsp - Plain (All Purpose) Flour
Salt & Pepper To Taste
150g - Panko Bread Crumbs
Oil For Frying
Curry Sauce -
1 Tbsp - Vegetable Oil
2 - Small Brown (Yellow) Onions, Small Diced
2 - Small Carrots, Peeled & Sliced
3 - Garlic Cloves, Sliced
5g - Ginger, Peeled & Thinly Sliced
2 Tbsp - Curry Powder
1/2 tsp - Red Chilli Powder
2 Tbsp - Plain (All Purpose Flour)
1 Tbsp - Soy Sauce
1 tsp - Rice Vinegar
500ml (2 Cups) - Chicken Stock
1 Tbsp - Honey
Seasoning To Taste
Rice -
1 Cup (200g) - Jasmine Rice, Washed
1 1/4 Cups - Cold Water
Salt To Taste
Method -
Place a large saucepan over high heat. Add the washed jasmine rice and water and bring to a boil. Reduce heat to low, cover and cook for 12 minutes. Remove from heat and leave the lid on for 4 minutes. Remove and fluff.
To make the curry sauce, add the vegetable oil, onions, carrots, garlic and ginger to a pan over medium-high and sauté for 10 minutes or until soft, mixing regularly. Add the curry powder and red chilli powder and cook for 2 minutes.
Add the plain flour, soy sauce and rice vinegar and cook whilst whisking for 2 minutes or until thickened. Add the chicken stock, boil, and reduce heat to medium-low. Cook for 6 minutes or until reduced by 1/3. Mix through the honey. Remove from heat and blend with an immersion blender until smooth. Set aside.
In a bowl, add the eggs and whisk to combine. Add onion, garlic powder, salt, pepper, plain flour, and whisk to create a batter. Beat the chicken with a mallet or rolling pin to flatten it. Dip the chicken into the batter and then into the panko bread crumbs to coat.
Fry the chicken in 170.c - 340.f oil for 3 minutes on each side until golden and crisp. Remove and let drain.
Slice the chicken into thick strips and serve next to the rice. Top the chicken with sauce and dig in.

I’m a big fan of you from Japan!!🇯🇵 I’m always cooking meal prep with your video. Thank you for making Japanese cuisine 🥰 I’m glad as a Japanese people😄
This (ヒレカツカレー) is a staple food in our 学食. I had yet to find an easy-to-follow recipe to make this stuff at home without having to resort to curry blocks.
Same here from Japan
Thank you so much! Can’t wait to get over to Japan! It’s my dream 🙏🙏
@@ChefJackOvens😮 you MUST GO!! 🇯🇵🏯🗾👹🍱🎏🍙🥢🎑
Hi Jack. My wife and I love eating Katsu Curry after mountain climbing here in Japan but when we ate at the curry chain restaurant I couldn’t help but feel I was eating factory food and it ruined my recovery sleep. Well now today I cooked this and my wife was delighted. From now on we will use this recipe. Thanks a lot. I love this channel. You are enhancing our life and saving our health.
the idea of mixing the flour and egg to make the bater was such a time saver. ill definitely use that.
I wanted to cook this yesterday, and then my favourite food CZcamsr drop this! Thanks man!❤
It looks very good chef! Thank you so much for sharing!
Excellent instruction and clearly well seasoned! Love it
Never made this before, but my family love this curry , so I am going to give this a try and out do the restaurant!! TY ☺
I've had this dish once many years ago so I'm happy to see you make it. It looks so delicious! I love the idea of breading with a batter for I believe you drop all your spices to the bottom of the flour bowl with the flour, egg, bread crumb method. I know I will love it, thanks!
This looks amazing, I'm gonna try this for sure 👍
This is one of my favorite! Now i can make the curry sauce from scratch which healthier than the store brough ones. 😍 Thank you Chef Jack! ❤️
MY MAN. Another new dinner this bad chef is gonna make. Thanks for making cooking more enjoyable. I have wanted since forever to enjoy cooking as its something that is needed every single day for the rest of our lives. Your videos and easy recipes have made me enjoy cooking at times!
Also loving this video format (I know you have been experimenting).
That’s the best thing to hear! Happy to hear it’s making you enjoy cooking. Thank you 🙏
@@ChefJackOvens I made it last night. It was great. The kitchen looked like someone threw a bomb in there, but other than it was great night. Thanks Chef!
My little brother has been craving this recipe for quite sometime now and I think it's time for him to have it this week! Thank you so much for putting it so simply to follow + written as well!
This was soo yummy and super easy to follow!! Everyone liked it and I definilty learned some new cooking tips and tastes! Thanks again a lot :)
Awesome to hear! Glad everyone enjoyed it and you learned a couple things 🙌🙌 cheers
Yum chef. Katsu curry is my most fav.
It’s very good!
Looks amazing!!!
Thank you 🙏
looks amazing, you are so awesome your knife skills are on point great recipe cant wait to make it
Thank you 🙏
Hey Jack buddy. Thanks for the recipe. I made this the other day. I grated and put in some apple. It was great.
Very nice!
Looks banging, chef! 🤌
Thanks for sharing mate
Always a pleasure mate
Omg I tried this and it was absolutely amazing, your chilli con carne was also unreal. Love your recipes
Glad you liked it!! That’s amazing to hear. Thank you so much
Thanks Jack.😊
This will be CJO recipe number 6 of the week! Can't wait to try it!
That’s so good! Glad you’re enjoying them all
The curry sauce is really a great base even for people who are vegan. U can add in lentils to make it a complete meal. I added in cube pumpkins and some cabbage then blend it before I add in lentils. So hearty and delicious! No honey needed!
Love this video, well all your videos for that matter, they are well presented and informative. Thank you for this recipe. May I ask you what curry powder do you use given there are many to choose from and on searching the web there are quite a few you can make from scratch with some very complex
I've always used the curry blocks you can buy at the store for this, but ill have to give this curry recipe a go!
It’s very simple to make from scratch. The curry packs are good though
Looks delicious
Thank you 🙏
Amazing 👌
I have only ever had this is Wagamama. Thanks for the recipe as I will try making it myself 😋
I really love katsu curry chicken, and this video is detailed enough that I now feel confident to try this at home, even if I don't quite have your knife skills 🙂 Thank you, Jack!
It’s all practice. I used to be awful with a knife. It’s one of those things that takes time but once you get it, it’s like riding a bike
@@ChefJackOvens I'm the sole cook in the family of two, and I feel like I'm stuck at a mediocre level -- I don't give myself cuts, and I use certain popular tricks but still dogged slow compared to your speedchopping.
I mean, it's a lot of practice but still probably nowhere near as much as a line cook.
Super cool to have the sauce done on its own, I want to have this available as a flavor enhancer for other dishes, plus it’s handy to be able to try making it on its own a few times and get the dumb mistakes out of the way 😄
Great thank you. For now I will follow the recipe on the chicken as I am tired of just eating roasted chicken like I did usually and use the curry from the Asia section . Thanks again
Sounds great!
Always fancied doing a Katsu , but too much faff lol…..this is so easy!! Thanks Jack! 🙏❤️
You can do it!
Yummy looks absolutely lovely 😋👍
Thank you 😋
I made this today for me and my partner and omg Jack honestly the flavours were so much better than the restaurents it was such a big hit loved it thank you for sharing your recipe 😊
Amazing to hear that! Glad you liked it
Made this today and my God it's lovely! Thank you for sharing the recipe, the curry came out exactly like a Chinese takeout curry sauce 👌
My pleasure 😊 Glad you like it.
Could you cook the breaded cutlet in the oven? I don't feel comfortable with oil. Love your videos as usual, keeps me eating a variety of foods
I made it today. The gravy is really easy and yummy. Even better than the japanese curry cubes and healthier. I added in cabbage and potatoes. Took out e potatoes and some Vege before I blended e gravy. This gravy will be great for udon noodle too. Thanks for e recipe!
By e way, I used mid Joint wings instead. In future I will just coat it with All purpose seasoned flour after dipping in egg since the wings already skin on. Using bread crumb is a bit messy for me and doesn't stick well but it does make it crispier
Wow...i learnt something absolutely new...and cant wait to try it, just watching you cut that fried chicken, was thinking i would have just eaten it as is😂😋😋😋 Thank you so much Chef Jack 😍
You are so welcome
great video
Thanks!
Chef Ovens getting JACKED
That’s the goal!
Save yourself a huge headache and use Japanese curry cubes
incredibly delicious recipe as always! is there an advantage to combining the flour and egg batter prior to coating the chicken in panko crumbs? your chicken looked perfectly brown on the outside and moist inside. cheers!
Skips a step in the process and creates a quick batter and crispy shell
Yum. I needed distracting and so came to CZcams and found you had posted a dish I love. I’m so going to make this once this danger is over.
Hope all is well 🙏
@@ChefJackOvens just on heightened alert. Doing ok.
@@ChefJackOvens it’s is now. Under control now and the mountain beside me no longer is glowing..just puffing a bit of smoke in spots
I already sent your link to my sister-in-law😍😍... she doesn't know how to cook... as she said so.😇😇
Ohh so its kind of like a giant chicken nugget with curry! Looks so good!
Hey, new subscriber here. I’m curious what knife you’re using? It is stunning
It's incredible how much difference Panko breadcrumbs make instead of regular ones.
100%
just use curry blocks... theyre the bomb and they taste just as good.
It looks delicious chef . I’m ganna make this❤ from Nepal 🇳🇵
Please do!
love this! is it possible to turn something like this into a meal prep or would it be too unhealthy?
It can be done. As long as you’re staying under your calorie deficit it’s fine
Love your videos….❤
Thank you so much!
I love this dish but have an aversion to frying in oil. Could the chicken be cooked in an air fryer or oven and would the batter need to be adjusted somehow to come out crispy?
I can imagine the airfryer would be a good alternative
Where did you get the blender? And what exactly is it called? Thanks
it's 2:30 in the morning and you're making me hungrier by the second.
Hello from Japan. Panko is made from a special technique of electrifying a huge blob of dough with electrodes, (so it isn't cooked in an oven like normal bread) it forms a big blob of white cooked bread without a crush
Is it possible to use olive oil as alternative to vegetable oil or is it necessary? The last time I tried frying with vegetable oil the polyunsaturated fats in it caused me to end up with a very serious flare up of guttate psoriasis, because of the oxidation of these fats raised at high temperatures makes it unsafe and leads to inflammation.
If you don't have/want to use a deep fryer, is it also possible to cook/grill the cutlets these in the oven? If so, do you need to alter the recipe/cooking times?
I was wondering the same, except if you can use an air fryer instead to make it a little bit healthier rather than frying it in oil. Would that work for this recipe, and if so, any idea on temp and time?
Air fryers are essentially convection ovens. Frying by definition means cooking in oil. Air fryer = marketing term. @@kotryna8188
You can defo shallow fry the breaded chicken too.
Hi Chef, what do you do with the deep frying oil after you're done?
Let it cool completely, strain it back into the bottle and reuse up to 2-3 more times. Once done. Place it into the same bottle again and discard in the bin
Love the pattern inside the saucepans where’d you get them
They’re hexclad

Aren't panko breadcrumbs bread that has been cooked by passing electricity through it rather than baking in an oven?
another banger from my favorite obviously bot-using CZcamsr
Another banger comment from my favourite troll commenter. You know if I used bots, I wouldn’t have a channel and be self employed 😘
@@ChefJackOvensi just don't get it, your patreon makes like $100 a month, videos rarely ever go over 50k views and you never seem to do ads, im not buying it, somethings up
Patreon is something that people choose to use to support me, I don’t ask for anything from anyone. Views have always been low at the start when I post since day 1. If I used bots, CZcams would shut me down. Just to prove you wrong, I’ve retired my fiancé, living my best life and enjoy what I do working from home. I don’t need to prove myself to you. When’s the second channel comingggg??💪💪
Not long now! Just finalising the remaining bits. 2-3 weeks max
i'd be OCD about using that much oil just for one peice of chicken! you reckon it would be ok to do say 10-15 peices of chicken in breadcrumbs then freeze the rest?
Yeah definitely
if only I knew cutlet meant katsu for the time I went to a sushi bar. was pricey too but at least ate eel
It’s good to try 😊
Can i use vegetable broth ??
Yes, you can definitely use vegetable broth as a substitute!

Uncle roger should come and review this.
He doesn't know shlt about Japanese food. He needs to watch a dozen videos to make it sound like he does.
It's the same reason he doesn't review hot thai kitchen.

Hey jack youve gained some. You bulking mate? Wish you well. Love from singapore
I am surprised you don't flour the chicken before putting it in the batter
The flour goes with the egg this time to create a sticky batter
@@ChefJackOvens Yeah, I get that.. But it's better to put the chicken in flour before the batter as then the batter sticks to the chicken better. That's how it should be done
@@tomsonfire3740 this is skipping that step to create a different kind of batter. There both right and have differences. This is Japanese cooking not western fried food 🙏
@@ChefJackOvens No lol, you didn't just skip the step, you just didn't know about it or bother to do it. I've watched Japanese chefs cook this and they coat the chicken in flour before breading it. It helps the batter stick to the chicken. Nothing to do with western fried food. Get your facts right
@tomsonfire3740 what I’m saying is there’s different techniques bud. It’s another way to make a batter without having to flour the chicken prior. It’s not that deep haha
Proper panko is a bit more than that...
Yes I know. It’s a different process
Actually katsu means breaded 🤓
Maybe not as good but Costco has some frozen breaded chicken breasts already cooked. Microwave, place over rice and pour some packaged Japanese curry. Dinner in minutes excluding rice that I have in single serving sizes already cooked and frozen.
That defeats the whole purpose of cooking ☺️
@@ChefJackOvensthat's the reason I said "Maybe not as good" but it is fast.
BTW, long grain rice is typically used in Chinese cooking.
