Happy to help Panther. The F Type is a fantastic car and definitely a better looking car than the Merc. You’re certainly very lucky to have these choices as your first car. If you can afford a nice car while you’re young then just go for it, you might regret it when children come along and a sports car no longer suits the family.
So your choice depends on what you want to get out of it. If you want something to look good then the Jaguar is purrrfect. If you want a car for performance and handling and fancy taking your new toy to a track day then the choices might change slightly. The Jag will do but you would be better off getting an early 5.0R Coupe RWD from around 2014-2015. A Porsche Cayman GT4 is also a great handling car. Lotus Exige V6 would also be a great choice.
