Almond & Chocolate Cookies

Recipe:
Makes for two baking sheets
Almond cookies:
85g (6 tablespoons) unsalted butter, at room temperature
56g (1/2 cups) icing sugar
5g (1 teaspoon) pure vanilla extract
2g (1/2 teaspoon) pure lemon extract (optional)
1 large egg yolk, at room temperature
135g (1 cup) unbleached all-purpose flour
56g (1/2 cup) almond flour
Chocolate cookies:
85g (6 tablespoons) unsalted butter, at room temperature
56g (1/2 cups) icing sugar
5g (1 teaspoon) pure vanilla extract
2g (1/2 teaspoon) pure lemon extract (optional)
1 large egg yolk, at room temperature
135g (1 cup) unbleached all-purpose flour
50g (1/2 cup - 2 teaspoons) almond flour
6g (2 teaspoons) unsweetened cocoa powder

The dough for these cookies is loaded with ground almonds, so it has great flavour and crumbly texture. Also you can use this cookie dough for tart shells, this recipe makes enough for two large tarts - almond and chocolate :)
