350g (12oz) frozen cherries, defrosted and strained
For the dough:
75g (2.6oz) unsalted butter, at room temperature
70g (2.4oz) icing sugar
3 egg yolks, at room temperature
160g (5.6oz) all-purpose flour
20g (0.7oz) unsweetened cocoa
1g (1/4 teaspoon) fine sea salt
For the frangipane:
65g (2.3oz) unsalted butter, at room temperature
130g (4.5oz) icing sugar
2 whole eggs
150g (5.3oz) almond flour
15g (0.5oz) your favourite rum (optional)
10g (2 teaspoons) pure almond extract
50g (1.7oz) sliced almonds
