As I said in another comment, many people in the US have never had real maple syrup. So it's possible that he may have been referring to the HFCS, maple-flavored crap.
I grew up in MD, where we didn't really have true maple syrup, since it was insanely expensive. The first time I ever tried the real stuff was when I moved to Ohio in my twenties. I didn't like it at first, but once I got used to it, I couldn't go back to the fake stuff.

Beth's pancakes definitely look the most appetizing, both shapewise and sizewise. I am surprised how gigantic and misshapen the professional chef's pancakes are.
I am boring, I guess, but I also think plain' ol' buttermilk pancakes are the best and they don't need any of the lumpy additions to make them good. I am kind of bothered that the chef added bacon to her first one, and that the first was so gigantic, and she threw it away. Some poor piggy was killed to make that bacon, and the least a person can do is not throw it into the trash.

Her methods were good but her recipe was bad. I'd leave the bacon out in favor for a more tart ingredient, like a blueberry, and then not use more butter per pancake than you'll find in an entire batch of Beth's. The maple syrup recipe she used is fire though; can't recommend that style of maple syrup enough.
