- We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of pizza. And then we brought in a food scientist to review their work. Which pizza was the best?

It’s a sourdough starter; they can go on for years, and even be a generational heirloom! The more fermented, the better :)
Yep, you "feed it" all the time, adding whatever you've taken from it...
also, its much easier to "maintain it" rather than start it a new, so its also a reason to maintain it for long period of time and not start anew each time

Level 3 Estimated Prep Time: *3 years*
Aged cheese
They didn't really describe the starter correctly. A starter is basically like a plant, you have to feed it new flour periodically and you can "harvest" from it as many times as you like. So it's not like this thing they aged for 3 years *just* for this one pizza, they've been using the starter for years and can continue using it indefinitely. Also I don't think a 3 year old starter would be much different to a 1 month old one anyway.

I'm a baker too ( but i'm 20 y.o ), and the funny thing is that in the comment every one is joking about that.... but most pro bakers do that in order to have a great dough ( where i work we have a 7 years old starter x), it really do bring a lot of flavour ). It's our job to provide great flavour to our customer, even if we have to prep a long time ahead. He probably annoys most of the viewers because he sound cocky, but honestly he just look confident to me, like most of the chef I know. ( sorry if my english is bad, I'm french )

I always put sauce first on the pizza and the pizza still tastes incredibly amazing. The crust is still has some crisp.

Back in the day people didn't buy packets of yeast for each loaf of bread. You'd save a hunk of dough that was already developed with yeast and add it to some more dough. That would develop the next dough and so on and so on, as Sim said, for years. Moms and grandmas would give new brides a bit of starter from a tasty batch to get them going.
