You are so right, some Jamaican people think because they cook curry Goat or oxtail the old way it tastes better then someone who uses a pressure pot. And in my opinion it makes no difference as long as you allow the meat to marinate.

It's not just about the food. It's about the vibe. About your mum reminding me of my mum. About the familiarity, about the way things are said and done that demonstrates a whole way of life and culture. Sterilizing it to fit around busy modern people kind of takes away from its flavour. Your mum's laid back way was the centre of it for me. Turning the cooking with mum into a "cooking class" turns me off.
