Made this using the 1 lb of bacon like in the recipe (half going back in soup, other half for topping) but making the roux in one pot like the video. Used immersion blender for a creamy soup. It was so good! We also topped it with some grated cheddar and chopped green onion. Perfect meal for this cold season. 🙌 Thank you.

i think ur recipe for potato soup is the best, i dont use the blender but i do just mash half more than the other half so that works.. so easy and its fast...
I do my own version of most recipes. Switch out ingredients for what I have or what I like. I made homemade veggie stock yesterday, so Im using that. I only had 1 piece of bacon so I added some ham & I like carrot in it. I was short a potato, they were old, but I have some cauliflower, so I'll use a bit of that. Itll be delish!! Thanks

I love soup so I make many different kinds. I especially like ones I can freeze in portions: vegetable beef with barley, sauerkraut soup, chicken and dumplings (yes, I call that soup), broccoli cheese soup with ham, Tuscan chicken soup, crab soup, goulash which is more like stew, pea soup with slippy noodle dumplings. And ones I won't freeze because they have potatoes or fish: corn chowder, hamburger soup, Manhattan fish chowder. These I make in much smaller batches because I only have 4 days to consume the entire pot. This potato soup looks delicious. I'll be trying it soon.

My potato soup is very similar but I like frying potato chunks in the bacon grease till they are crispy then I add the liquids

Why would anyone want soggy bacon in the soup
I bought the bacon pieces that Costco has and cooked them on the stove in some bacon grease. They weren't really soggy because they were small. But, I thought the same thing about soggy bacon. It was a delicious recipe tho
that's literally runny mashed potatoes with extra ingredients...
Don't like the idea of flour in soup . I would like to see it made without flour. Potatoes would thick it enough.
Try instant potato flakes.
