Bahan-Bahan:
- Cabe Kering di sangrai
- Sichuan paper dihaluskan
- Wijen sangrai
- Garam
Bumbu Minyak:
- Minyak Goreng
- Kayu Manis
- Star Anis
- Cengkeh
- Daun Salam / bey leaf
- Jahe
- Bawang Putih
- Bawanh Bombay
- Daun Bawang
Cara Membuat: mix semua bumbu kedalam minak masak dengan api sedang sampai semua bumbu kering kemudian pisahkan seluruh bumbu dari minyak.. dalam keadaan mendidih tuang sedikit demi sedikit minyak kedalam campuran cabe sampai terendan sempurna sambil diaduk-aduk

For those reading the subtitles. Rapeseed is basically Canola oil. Tsaoka is cardamom pods, whole. The oil infusion process in this video is amazing. I would have crushed the cardamom pods first, though. I like a few less chili seeds so I pick many of those out before grinding. I also like to have a pure without the chilis, so I filter out those after making. I love how the oil is added in steps...first gently, then suddenly. Very traditional.
Yeah it's just called Canola Oil now, because of political correctness, some found "Rapeseed" too offensive... People should just fall of the planet with their political correctness, it has become beyond stupid!!!
And the subtitles for the chillies aren't quite accurate. That was not frutescens, nor were those Bhut Jolokia. Now, granted, these pods are all perfect for this recipe, I'm just a pepper freak.
Chinese rapeseed oil is not the same as ordinary canola oil. The seed is roasted, and traditionally a virgin rapeseed is used (this means that the erucic acid has not been bred out). In most Chinese markets in the US, you can find a roasted low erucic acid variety that is a decent substitute. If you can’t find at your Asian grocery store, use peanut oil. It’s not the same, but is acceptable and can handle high heat.

@@mrdwimary960 then you would see that those are not Bhut pods at all. They are perfect pods for this recipe, they're just not that particular pepper.

Paula, they did add cinnamon sticks at the 6 minutes time. They didn't add the whole stick but cut the cinnamon to smaller pieces.

Hi Paula, the chili crisp I believe is cooked with a higher oil temperature to make the chili crisp (a tad burnt but not burnt bitter)

The first six ingredients are not understandable by an English speaking public. Also, measurements (preferably by weight) are needed. Otherwise it is near impossible to follow this recipe.
Dried red chilli, green sichuan peppercorns, toasted sesame seeds, salt, black cardamom pods, star anise...
Cinnamon bark, that is the first dried thing she weighed after the pepper mixture.

It is not that difficult.... because there is no hard and fast rule as far as amounts of various components go. We use these (and more) spices in Indian cooking as well.
However, one important thing to note is to use either Peanut or Seasme Seed oil because both impart nutty flavor to the finished product. Alternately, use any flavor-neutral oil but stay away from Olive Oil. It is too viscous and overpowers the flavor.
I started by making small batches of Chilli Sauce, and adjusted each ingredient to suit my needs for flavor and fire. Now I have perfect sauce formy liking.
