How can you baist the meat but not the skin, by the way why are Americans obsessed with the word super

Can’t answer to the super part but you bast the meat to keep it moist and prevent it from drying out. You don’t want to bast the skin because that is what you want to be dry to get it crispy. It’s hard to get something crispy if you keep it wet.
