Ingredients
3 to 4 tbsp Coffee Powder
1 Cup Boiling Hot Water
1 Cup Boiling Hot Milk
Sugar to taste
South Indian Filter Coffee - Filter Kaapi | Degree Coffee is prepared using a special filter, which is used to brew a concentrated coffee decoction, which is then mixed with frothy hot milk & sugar to create a perfect cup of coffee. It is traditionally served in a Dabarah and Tumbler.

What blend do you use and how much chicory do you mix ?
being a punjabi , earlier coffee for me was just instant coffee but just couple of months back i found out filter coffee and trust me its 100 times better then instant coffee . even though i used to drink lots of instant coffee the but burning sensation or acidity was slowly taking toll on me but since i made switch to filter coffee its been great experience . no burning sensation just a great coffee to get things going
+ point - filter coffee has 0 cholestrol !

Just came back from Kerala and had the best version of this in Annapoorna restaurant. They said they used Green Label Bru Filter Coffee to make it. Absolutely one of the best coffees I've had.

Some online south indian websites that seem genuine like et by kayal do not provide a plunger with their brass filter coffee makers. can you ell me whether a plunger is necessary in a filter coffee maker? If you are fine with not soo strong coffee, you could make a second decoction which is much milder than the first! Otherwise, it has to be discarded as with any other coffee with beans! Hope this helps!

nope. It loses all the essence, flavourful compounds and oils present after the 1st extract.
By reusing them, you will achieve a poor, bitter-tasting cup of coffee.

Yes, roast of the coffee ground and also the amount of chicory will determine the colour...Hope this helps!

What if I heat the decoction before adding milk ?
Yes of course you can store the decoction for a day... do not heat the decoction but just pour boiling milk to the decoction so that it’s still hot... heating the decoction changes its taste... but, I must mention that fresh always tastes better!

Add milk water sugar boil it..once it reaches boil simmer add coffee powder increase to high flame once the foam reaches up stop the flame. Filter and have it. It's same taste as filter coffee traditional method it's simple for making few cups with out having to wait for decoction

Hi… in my opinion, one reason could be that the pores of the filter are too small or blocked… the other reason could be that the coffee powder granules is very fine!

water percolated in 2-3 minutes and decoction was watery. grind: fine (south indian filter by bluetokai) without chicory. i used elementary masai brass coffee filter. kindly suggest how to get thick decoction. thank you !
The water will percolate down slowly depending on the filter size, quantity of powder placed, the grain size of the coffee powder & also don’t forget to tap it with the plunger. Krutik coffee with atleast 20% chicory is essential for a thick decoction. Chicory is what gives you the colour n thickness. The hotel blends have upto 40% chicory!

In 20 mins the decoction gets cold. I use very less milk so even if i pour boiling milk, coffee is still lukewarm. What can be done for boiling hot coffee

the way of doing it without the coffee filter, looks like the same way you'd brew in a french press. but i guess you just use much less water.
