You'd be surprised that snails are a delicacy here in Mangalore ( a coastal town in Karnataka India). Here it's wild caught in the paddy(rice) fields during the rainy season

I'm from the coastal city Mangalore, Karnataka, India.
We eat narthe(escargots) as well. It's delicious. We only get them during the monsoon season- that is June - August

In Kolkata we also consume snails specially it is very popular in rural sites of West Bengal. We call it googly. We make a spicy curry with it. Next time u visit Kolkata please give it a try.

I love escargots with tarragon sauce. Hey, have you tried the other French delicacy - Goose Liver pate? Think it's banned in USA and many other countries because of how the geese are fed.
The foi gras, yeah it's delicious but I agree the process to obtain it is sad for the geese. Probably similar to what this farmer said about harvesting dehydrated snail slime in terms of the animal suffering

Try fresh water snails of north east india if u visit again. They are chewy and tastes veryyy good.

No. You don't "need" special butter or parsley, etc.
Full-stop: snail which are washed of sand/grit are amazing when prepared right.
