  • People have been eating land snails for roughly 30,000 years… Heliculture, a fancy word for snail farming, is a practice that is gaining traction here in the US as chefs increasingly search for unique local products. Peconic Escargot is hand raising snails on foraged greens and chefs are creating dishes that highlight the mollusk’s delicate flavor.

    As a chef of twenty years (or so) and now a home maker, this is about as exciting as food gets. Thank you for such a great episode; the creative innovation and work to get their snails viable "Peconic Escargot" is leading the industry and knocking it out of the park as far as the US production and knowledge goes.
    Thank you so much. I am already seriously working on my own Greenhouse.

    Growing up my Sicilian Nono would often make Babbalucci. Every time I have them I think of him.

    been harvesting, processing and eating snails for many years now, enjoy getting them after a rainy day at my local park even found pheasant back mushrooms there, i usually get 5 to 6lb at a time and purge them for over a week before consumption i even started looking into preserving them in jars to last for the winter months or longer

    Oh my goodness!!!!! I just saw your presentation on create public television in North Miami Beach Florida. My father flew with Pan-American airlines so he was definitely a foodie and was feeding me Escargot when I was in a high chair. At about age 5 he taught me how to open cherry stones or little necks and of course the Ipswich clams. After he left Pan Am he bought a yacht that was converted from an Aracy rescue boat which is just like the PT one 09 except instead of 109 feet the Air-sea rescue

    so if these are the same consumed species like they got in france etc you saying they flourished in the usa so that you can find em in your garden or local parks and forests? then how come i don't find these up here in canada? i thought you imported some live ones with a permit and grew them on your farm but seems like you just harvest wild ones and breed them
