      The one thing that is not needed and Mutti proved this, is adding citric acid of any kind to the passata.

    Taste test: Gluten free pasta. I love pasta but i and many others in the world can only eat Gluten free. take rummo in the test this is for me the best gluten free pasta that they make.

      @@vincenzosplate only Italian Brands as Rummo Penne and Rigatoni, Semper eco sedani Penne are pretty nice. there might be other good ones in italy but not easy to get here. The house brands here in the supermarket aren't any good. Avoid the ones which is only made with corn, they are really bad. I need an italian to taste test for me :) to see which one comes close to wheat pasta.

    From my experience always look at the ingredients and if you have the choice buy the ones that only have tomatoes and salt in it, those are much less acidic.

    I’ve just recently switched to basically using Mutti everything (paste Passata tomatoes since DOP’s tough to find here, tomato sauce is now available near me) my family have noticed a nice difference in my sauces. Mutti seems to be a bit of a step up from the regular crap but it’s readily available. Very happy with it

    Reconstituted does not mean re-used. It means water or some other liquid was use to rehydrate something that was dried. You normally see it when dried mushrooms are soaked in warm water to soften them up or when dried chiles are soaked in hot water before turning them into some sort of sauce in Spanish\Mexican cooking. Those tomatoes were dried.

    3:06 It is quite worrisome to have a jar of sauce that had not yet been opened and see mold on it ! This can usually happen when a jar has been open for a while, but not when a jar taken from the supermarket had not yet been opened. Unless, as can also happen, someone in the supermarket had already opened the cap, air entered, and therefore lost the vacuum. I personally noticed a few times in supermarkets, in testing the cap by pressing on it with my finger to see if it was still vacuum-sealed and had not already been opened by someone. Which always worth doing when you take jars like that (sauces, jams or whatever).
    PS: In some cases, of course, a factory defect cannot also be excluded, but in most cases the cap has been opened by someone.

      @@vincenzosplate Vincè, può succedere quando una confezione è stata aperta e il coperchio non è più sottovuoto, ma è entrata dentro dell’aria. Succede a volte, se ci fai caso bene, nei supermercati. A me è capitato varie volte testando con il dito il coperchio. E se il coperchio fa quel “clic clic”, è segno che non è più in sottovuoto, ma che entra dentro dell’aria. C’è sempre qualche incosciente che apre il coperchio per annusare o semplicemente perché così gli passa per la testa e poi rimette la confezione nello scaffale. Altrimenti quando la confezione è integra e il coperchio non è stato aperto, io non ho mai verificato in vita mia della muffa dentro una confezione !
      PS: Potrebbe qualche volta anche capitare qualche difetto di fabbrica, ma nella maggior parte dei casi il coperchio è stato aperto da qualcuno.

      @@aris1956it can also happen during the bottling process, when the sauce drips onto the collar of the jar and isn’t wiped clean before being capped, which happens more regularly than you think, but is normally picked up with quality control checks, this one obviously snuck through. It’s more likely than someone having opened it in the store.

    compare the taste of italian olive oil to greek olive oil

      They are both amazing as long as they are from top quality olive oil producers. The ones from tge supermarket are commercials. The top quality greek and italian extra virgin olive oil is made in small towns and stay in the town. They dont travel

    Personally, I always buy Mutti. The quality is consistent, and if tomatoes are the star of the dish, the tomatoes must be of good quality. Fresh tomatoes are no good if they are out of season, and tastes like cardboard. This is also why Italians make passata, and can tomatoes. They preserve them for when the tomatoes are not in season to get good results in cooking.

    Here in salento (puglia), me and my family always use passata di puglia. The one you ranked first. I am always astonished how good it tastes and i always do a pasta risottata in a sauce with that one. Can make the best pasta dishes in my opinion. Glad you loved it too

    I am absolutely loving these videos because as a person who lives alone, making my own homemade passata is time consuming and produces a ton of waste. I can’t count the times I feel bad throwing away herbs because I only need a couple leaves in a dish

    Mutti is to passata like Barilla is to pasta, in that it's ubiquitous and can be found anywhere. Although unlike Barilla, Mutti is actually good.

    Guys please be aware that as soon as entire mold-cultures start becoming visible the actual mycelium and spores have penetrated far deeper. For hard cheeses you can cut off a chunk about twice the size/depth of the mold-penetration but as soon as starts showing in cottage/fresh cheese, runny sauces like in this case the passata, or stuff like jam, watery fruits and vegetables, once you see it the spores have essentially infested the whole thing.
    It's not like it will kill you if you scrape off the moldy part and eat the rest but over the long-term you are needlessly assuming toxins that might cause harm down the line.

    The only brand I have found in US (not near a big city) is Cento. It’s made in Italy, ingredients are tomatoes and sea salt (only), it’s smooth, and is only about $3.

    Reconstituted means dried and then water is added back like dried mushrooms. When you go to cook them, you add the water and it reconstitutes them.

      @@vincenzosplate I make my own when I need it from tomatoes from my garden, but it's good to know what brands to look for if I ever need it in a pinch and tomatoes aren't ready.

Where did you read that taste is something "objective" ?? It has always been said, and not only by us in Italy, but also in the rest of the world (maybe in your country things will be different) that taste is something personal, it is something subjective. If you like something, it doesn't mean I like it too. And this obviously also applies vice versa.

    The Coles brand was a shock to see it beat the ones behind it. But I'm glad your consistency with Mutti hasn't wavered. The only attribute I don't like about Mutti is that when reducing it, it tends to go straight to boil and bypasses a long simmer, because it's doesn't have much liquid. However, you can add some extra pasta water to it to compensate for the lack of liquid. Bravo ciccio! Grazie.

    maestro vincenzo, what’s the differences between penzerotti and calzone, are they a similar thing that came from a different area or totally different dish?

      They are similar in shape but the ingredients for the dough are different. Calzone is baked while panzerotti is fried. Similar but different

    I like this blind folded test. 😊 I am very happy that you liked Mutti. I remember you once tested tomato sauce and you did not like Mutti tomato sauce with basil.
    Mutti is my favourite, especially the tomato sauce made with San Marzano tomato. Next time I buy Mutti passata. 😊
    For the next time, would you test mozzarella?
    Here you can buy Zanetti, or Galbani, or Goldsteig or Dream farm mozzarella.

The San Marzano tomato sauce sounds delicious-I’ll have to give it another try. Testing mozzarella sounds like a fantastic idea! I'll look into Zanetti, Galbani, Goldsteig, and Dream Farm mozzarella for a future video. Thanks for the suggestion and for watching!

      Italian chefs say that the San Marzano tomato is the Rolls Royce of the tomato's.

    I have been buying mutti from my local iga for a while now and find it quite tasty!

    I also recently found Passata di Puglia in my local Italian shop and I bought one to try it out, its was cheaper than Mutti at about 2euro per bottle...

    I agree with your thoughts on Cirio, i tried it once and also found it acidic. Apart from the ones you taste tested Vincenzo, i find Le Conserve della Nonna good.

    I’ve always been a Mutti guy, when I order it I have to wait a while, but it’s worth it, their DOP San Marzano tomatoes are unbelievable, very expensive but worth every penny. It’s hard to find good tomatoes on Cape Cod, we can find Cento, but they’re expensive too, so I figure I’ll just order the Mutti, they’re the best for me. 🇮🇹

      I stick to the reviews that I have given in this video even for when they are heat up! Mutti is a beautiful sauce to cook with, I will have to try Rosso but I have high hopes! 😊

    Muttie is the best brand in north of europe..and after your taste test it is up on the top. now they sell sofrito paste i use.

    I make deliveries of Mutti. Passata,Pelati,Pulpa you name it
    While it is expensive than average brand,it is really good to cook with. Just add a bit of olive oil to counter the natural acidity

    The acid is probably added to them in some calculated manner to compensate for the ph of whatever the puree is so they can can the tomatoes and ensure safety. IDK if these factories employ pressure canning so it would make sense if they did not to get the ph in a safe space.

    Here in the UK we are drowned in cheap supermarket tomatoes, plus mostly big brands like Napolina (which are no better, just twice the price!)
    I found Mutti some years ago now, and it's my go-to for any tomato product. It's usually available on one online supermarket or another, and mostly at a really good price or on a deal.
    If not available, I might buy Cirio, but more often than not I'll just forgo making that sauce that night.

      @@vincenzosplate I've not come across Leggo's and Coles (being in the UK), but I have had Divella products before, and I think you've got the relative scoring on point vs Mutti.
      Of the others I recognise a couple, but haven't tried them.
      I'm a bit surprised that Cirio scored so low, but I've only ever used their whole canned tomatoes, and we all know chopped or passata can be made out of the less nice tomatoes than the whole ones.
      I've stuck by Mutti for ~5 years now, and friends are always impressed if I make a simple tomato sauce, and many have converted to Mutti as well.
      I've got to mention DeCecco pasta - I do sometimes buy better or more artisan pasta, like Monograno, Molisana etc, but DeCecco is such good bang for the buck - usually no more than Napolina, which is pretty foul....
      Again, I've converted many, many friends away from rubbish pasta brands in favour of DeCecco..
      Some good extra virgin olive oil, an anchovy or two, some chilli, plus the winning combo of Mutti and DeCecco always makes for a delicious, digestible meal.

    I buy the one from Aldi in Germany. It's just tomatoes, basil and salt. But I think it's German tomatoes. Sometimes they are not so good. I like it when my grandma made tomato sauce from tomatoes from her garden, it has more flavors.

    I've been using Mutti was will, and I'm pretty happy with it. Of course, nothing beats fresh tomatoes from your own garden, even if that garden is not in Italy (how sacrilegious) 😉

    Vincenzo please explain something to me. I thought passata was skinless and seedless tomatoes. When I see puree written on a bottle of posada I think it must have seeds. Yes or no?

    You forgot lamolisana brand, they make Passata too and available at woolies. You should also add another ultra premium brand in the same supermarket that’s maybe 2-3x more expensive than the cheapest you can get and see if those expensive brands really worth it.

    Reconstituted doesn't mean "reused" it probably means that the tomatoes have been dried before and then reconstituted in water.

    I know this could be very hard and pricey but you should test the brands found in the US for both Olive Oil and Tomato sauce. I bet you would some big reactions hahaha 🤣

    How many of them have Chinese tomate paste in it? Look for the documentary on tomatos. Should to react to that documentary

    Vincenzo i reckon its the vintage of the Tomatoes in the jar , I don't think their all telling the secrets on that label their company secrets otherwise everyone will be copy catting the sauce. Anyway I don't think you tried the Aldi versions and there's another called Nonna Maria's Authentic Passata from Woolies looks interesting , and also you should compare ready made Lasagna there are some many of them in the ready-made fridge and frozen. cheers

    Mutti is really good. Pretty much my default choice. In my experience, Cirio tastes too acidic and harsh. I'm glad to see my palate agrees with yours!

    i only use the passata from Mutti. Tastes really good for me. It has only one drawback, it has almost no sweetness. And if you make a bolognese out of it, you need to add something to give a slight sweetness.

    FYI Reconstituted means that water was removed to create a concentrate (like tomato paste) and then (the same amount of) water was added to the concentrate to make the reconstituted passata.

      @@vincenzosplate Well it depends on the ground quality of how they taste. In some countries you simply just can't grow sweet tomatoes. 😊
      But it is alright, everyone is used to something different in taste. It just depends on where they have been grown up and what they got used to like. ♡
