I’m using a 6quart pot and the bowl should fit about 1/4 of the way down. You don’t want the bottom of the bowl to touch the water in the pot and the pot should have no more than 1.5 inches of water in it

If the bowl says microwave safe bit not for stove top, does that mean you can’t use for this method?
Is the bowl plastic? If it is plastic of any kind it should not be used. Glass, ceramic, or metal should only be used for the double boiler.
is it imperative to use the double boiler method for beeswax and infused comfrey oil. Why can't you just put the heat on super low and do not boil or burn it?
Great question. For one, if you don’t have a dedicated beeswax melting pot, you might not want to risk the contamination. If you do…then very low heat would work. The double boiler method provides a nice buffer and ensures that there is not risk of burning…something that can’t necessarily be guaranteed by just low heat. What if the non was accidentally turned up for example? Also, with chocolate there is the risk of both the fat and the sugar burning, which is why it is never recommended to put it in a pot which will come in contact with direct heat. Lastly, constant stirring of chocolate, even slow, can add extra air which can affect the chocolate, especially if tempering. The double boiler allows for less need of constant stirring.
Why is this neccessary on induction? Or electric, you can set those burners to incredibly low settings. Which renders the double boiler useless, Double Boilers I thought were for gas and propane where the low setting isn't low enough for gentle warming.
Not necessarily true. Even with a low setting, there can be the risk of burning when the chocolate comes in direct contact with the heat. Chocolate can burn as low as 125F, so the added gap and fact the chocolate never comes in contact with direct heat protects the chocolate. If one is very careful and stirs constantly it is possible to melt chocolate directly on the heat source, but why tempt fate. The double boiler ensures that the chocolate will never burn.
@@SteveKonopelski How does that help though when steam can get up to 212 degrees f, which is still to hot. Yes it is cooler than a gas/propane flame, or an Electric or Induction burner set on high, But the lowest setting on my induction burner is 120 degrees, wouldn't it be better just to use the burner on low in that case?
If you have the luxury or an induction burner with a low temp by all means use that. Many people do not, so the double boiler is a method that works for everyone. There should be no steam when using a double boiler since the heat is lowered once the bowl is placed on top. The water should be at a bare simmer. There is always more than one method that works and more than one way to put on a pair of pants.
