  • ALOO BHAAT
    INGREDIENTS
    3 tbsp ghee
    2 pieces of star anise
    2 bay leaves
    10 peppercorns
    5 cloves
    5 green cardamoms
    1” cinnamon
    1 tsp cumin seeds
    2 medium onions sliced
    1 tbsp each ginger, garlic and green chilli paste
    1 tsp turmeric powder
    1 tbsp chilli powder
    ½ kg boiled potatoes peeled and cubed
    ½ kg rice boiled
    2 cups of yogurt
    Finely chopped coriander, mint leaves
    1 cup of fried onions
    METHOD:
    i. Heat the ghee and add the whole spices. Once they release an aroma add the onions and fry till translucent
    ii. Add the ginger, garlic and chilli paste and mix well
    iii. Add the turmeric and chilli powder and add a little water and cook for a minute
    iv. Add the potatoes and salt and cook for 4-5 minutes
    v. In a vessel first make a layer of the rice and then add some yogurt, chillies, coriander, mint, fried onions, then add the potatoes and repeat the process till the rice is on top
    vi. Cover and cook for 20 minutes and serve
