Turkish Ice cream Dondurma PT2 - Chef's recipe is awful

  • Well this one was so disappointing, a chef's recipe for Turkish Dondurma and it is one of the worst ice cream i've made.
    I didn't adjust this recipe at all, I didn't put it in to an ice cream calculator either so it shows what to expect when selecting a random recipe from the internet.
    Please don't waste your time making this, it is just a waste of money and ingredients.
    I am though, going to make this a 3 part series so I can actually finish with a decent recipe for Turkish ice cream without using Salep (the real salep, orchid root flour) or Mastic.

    I was so looking forward to this episode, was just as disappointed as you to see the end result. Have been experimenting for months now, and am keen to see your version. Have not yet found a suitable replacement yet for the salep version, but am getting closer and closer.

    Hello chief, I had never thought of a PC, I was usually watching CZcams on my mobile phone, I tried it on my PC, I did what you said, the translation problem was solved, but in some CZcams videos, when you enter the translation, it automatically says Turkish in a single line, and even in different videos, from different countries. However, it automatically gives Turkish subtitles, for example, they made a video from South Korea, even the title is in Turkish, I also heard from CZcamsrs that if it has subtitles, the CZcams algorithm will prioritize your video and recommend it to the viewers.

    I do stretchy ice cream using guar gum and mastic and the result no different from using salep , but u should cook the milk with ingredients to get good results .

    nick, do you use a 0.01g scale for stabilizers - is it finicky when measuring? also, which chef are you talking about from the philippines?

    I am trying to figure out the ration of Locust Bean and Gaur Gum powder to liquid to make some Persian Bastani Sonnati ice cream, could you please give me some advice?

      I’d start with the basic amount like any other ice cream. 1-2g (combined) per 1000g of base.
