I think that is the salep they use for making their winter drink, like a hot milk drink. I went to the spice shop in Turkey and the man sold me "dondurma salep", ice cream sales. It was sold by the gram and he said it was the purest form, for icecream making. I have no idea where you could get it if not in Turkey. I think it is some kind of ground up lotus root. Maybe online?
