  • I seasoned up an 11.5 pound Black Angus Choice Brisket with SuckleBuster's 1836 Beef Rub, Campfire Steak Seasoning, and Competition BBQ Rub. My 1st brisket on the Traeger turned out Perfect !! Nice and Juicy, Perfect smoke flavor, a great smoke ring, and the flavor from the rub combination was Next Level Good !! I'm Impressed with this grill !!

    We love, love, brisket, never try it on the smoker, but in the oven for like four hours, just plain salt pepper couple other spices and is delicious. I will try to go away someday, good job Chef really take care of your family. Love you lovely.

    That's a really wild smoke ring Sean, and that brisket was juicy as anything. Those sucklebusters are good, I've had the hogwaller and 1836 plus the lemon pepper thing all were good. I'm liking how that traeger holds temps. Have a great 4th weekend brother!

If I hadn't known better ..I would say the brisket was smoked on my Old Country offset, Weber Kettle, or OHJ Bronco ! It was that good ! The temp is pretty consistent.     Dang. You did an awesome job! I know you enjoyed that brisket brother. Just got my Traeger 34 a few days ago and I picked up a 10 lb packer brisket today Cannot wait to get that baby on Traeger tomorrow!! Only hope it comes out nearly as good as yours! Happy New Year!

    You can use a probe on the taters, too. Once they get to 205 you can take them off, their temp will rise another 5 degrees or so if you don’t cut them open for 5 minutes.

      I have learned how to make the best brisket's. I buy mine from costco, I don't trim any fat off it. I use buttery steak rub over all of it. I put it fat side up and turn the trager to 180 for about 5 hours then turn it up to 225. When the internal temp in the largest part gets to about 165 I wrap it in butcher paper and pour a cup of water in as im wraping it up. Put it back on until the internal temp gets to around 203. I rotate the brisket every hour or so. One end will cook faster on the hotter part of it. After its done I put it in a cooler and let it set for 8 hours then its ready.

    Just bought a Traeger last night. Gonna break it in this weekend with first cook. I noticed the foil on the tray. Does that make cleanup a lot easier?

    So do you have the overall cook times and tempertures for a 11 lb brisket? I just bought this grill and I have no,experience with it.

      Hey Robert. I'm sorry I missed your comment man. The cook time is usually different for each brisket. Larger briskets take longer and different grades of meat cook differently (Wagyu, prime, Angus, choice) Get Prime if you can. Angus and choice are ok too, but Wagyu is the best. I think Prime is the best for the money Lol!! 😂 The temperature is the important part. I'll smoke my brisket...whatever size it is, until the bark sets and the internal temp gets to around 165. then I wrap it up and crank up my heat to 225-275 and get the internal temp up to 195-212 degrees. make sure it probes TENDER with an instant read thermometer, and I also use my instant read thermometer to verify the temps. it just depends on the brisket as to how long it has to cook. depending on size and temp. it can take 6-24 hrs. Mine usually take 6-8 hours. Leave it wrapped and let it sit and rest to redistribute all of the juices...at least an hour. Hope this helps! Have a great weekend Brother! CHEERS!!

    Ruined that brisket, painful to watch ugh. 375 is waaaay to high! 225-250 max, 12 hrs then wrap it. Fats not going to be rendered

      250 max. Hmmm. 🤔 is that why Franklin BBQ cooks at 285? 225 is an ongoing lie that wastes time. 300 to 310 is the Malliard reaction. Anything under 300 is fine.
