In some instances, fresh pasta is not as good for certain dishes as dry pasta. As Gordon well knows though, fucking ravioli if you’re not making it fresh, you don’t care.

Whenever I go to an Italian restaurant, the first question I ask the server is, "Do you make your own pasta here?"
If they say "no", I may order dessert and a soft drink, that's it.
Some Italian restaurants make fresh pasta and also use imported dried pasta. The honest restaurants will note on the menu which pasta dishes are made with fresh pasta and those made with dried pasta.
