Yep, he's mentioned in interviews that he's tough on hell's kitchen because they're supposed to be professional chefs that should know what they're doing, but when it comes to shows like master chef he's nicer because they're amateurs who have a passion for food. I'm not a psychiatrist but he probably has narcissistic personality disorder. If he's anything in his personal life like he is in these videos I'm sure that wouldn't be a far out assessment.
Well, I'm doing Psychology at university, so I'm not a proper psychologist, but it seems to me like he has very strong levels of narcissism. Maybe when he was a child he was overly adored and now if anyone treats him as anything less than perfect, he thinks they're basically spitting in his face.
Also the copying is due to (I believe) an excess of mirror neurons. Not sure what you'd call his overall condition but I think it's a combination of many things.
To be fair to him, it's also possible he has autism on top of that, so that he genuinely can't read social cues (this would also explain the poor "common sense", which is a trait in some but not all!)

@@joco8290 It isn't, I know it's hard to believe but people like Joe exist all around us. Some are harder to spot and some are more toxic. He's just a classic narcissist, he shows all signs of it. For example he comes off as very personable in the beginning of the episode where he wants to show Gordon his farm (very typical of narcissists that's why they are usually hard to spot at first glance) . He puts on a persona of a hardworking ambitious restraunteur but in reality the restaurant functions as his way of feeling better about himself and making him feel important. It's quite fascinating to see, he is deeply insecure but in extreme denial of it as all narcissists are :)
