Indian cuisine hands down is the THE BEST in the world and has the widest range (veg and non veg) and most complex palate (savory, sour, spicy, sweet and sometimes all together in single dish; aromatic, using lot of variety of condiments and oh so pleasing to tongue buds!)! Indians generally eat home cooked food. And that is generally healthy. Restaurant food is eaten less like once a week so that is usually geared towards taste and hence very oily and heavily spiced.

That’s correct. Curry just means gravy. That’s it. There is nothing called “curry” in Indian menu.

Curry is not just gravy it is the ingredients
Curry the word originate from tamil,here we called vegitable curry,mutton curry,chicken curry etc etc which is prepared with the basic three ingredients in the proposition of 1:2:3.
For searching these ingredients only the romans,arabs,Westerners landed in the southern part of india.
Curry is the word that the British copied from the Tamil people of Madras presidency when they were having East India Company HQ in Madras (now Chennai)

Indian's used to ware these kind and so many other kind of our own drees type back in the days, It has become to this level because of people's lack of following traditions, listing false information and want to follow other things, now our parents also not giving importance to our own culture(not everybody's). but to giving importance to make money and make better lifestyle, mostly that's all they wanted nowadays.

Garlic and onion is considered kind of non veg, 1 tree/plant 1 fruit or vegetable thus that kind item is considered non veg. Ginger is not such case thats why it is used.

The curry basic is 1:2:3. 1portion turmeric @curcums 2 portion of red chilli powder 3 portion of coriander powder then u can add athor flavors according to ur taste like kashmiri chilli powder,garam masala,mango powder,dry ginger garlic powder etc etc

In some parts potato too is avoided too
Still you can cook the best and most vegetarian food.
