The N-1 is like the classy, timeless corvette of Star Wars fighters, and Din Djarin's N-1 really gave me "souped up muscle car" vibes when he flew it in Book of Boba Fett, especially with that engine sticking out of the upper hull.

Yup. Lucas was very into the N1 design for TPM; the chrome and sleek profile were nods to his obsession as a teenager with muscle cars. And yup, the exposed engine part on this N1 is a shaker scoop - a real thing on real muscle cars! I love it!

I really hope that Mando gets a larger ship, either a Corellian freighter or a MandalMotors ship. Then, modifies the ship to dock his starfighter into it. He could then use this ship as an escape craft or an attack craft. It would be similar to what Bossk did with The Hound's Tooth. He had a z-95 headhunter docked to his ship for quick getaways or to deal with enemies

The Razorcrest had the advantage of being more spacious as it was originally intended to be a gunship like the LAAT, but it was too clunky and lacked weaponry, speed, and the versatility of a starfighter. Mercedes, Porsche, Toyota, Aston and Jaguar all still keep cars from decades ago in production in the exact way they originally made them.
Mercedes and Porsche understand the quality of their own machinery and still produce parts for cars from the '50s. If you have a Mercedes 190 or 280, they can get you any part of that car but brand new.
Toyota offroaders are some of the most capable in the world. Countries like Australia depend on cars like that and so Toyota still produces the same old year models of Land Cruisers today. They can be made cheaper but still maintain their legendary reliability.
You can literally go out and buy a 40-year-old Land Cruiser from Toyota that was manufactured within the month of purchase.
Aston and Jaguar being quite luxurious companies with a strong attachment to their history, have and continue to remake their iconic cars from the '50s - '60's in the same way they made them back then. Jaguar recently did a production run of their famous 1955 Jaguar D-type in 2020. The OG D-type was made using leftover WWII fighter plane materials and was held together by rivets, thus in 2020, they sourced the same type of sheet metal and used the very same dimpling machine from 1955 to do the rivets.
Some craftsmanship is just good enough, where remaking it 1:1 is enough in a future with higher standards.

For a Star Wars one-man fighter, the Naboo N-1 is truly original. Introduced in The Phantom Menace, the N-1 doesn’t really look like anything else in Star Wars - prequel or original trilogy - and years later, that’s what makes it innovative. It’s clean, is a beautiful yellow and silver, and is rounded in design as opposed to the angular look of the original trilogy’s ships. As a testament to the gifts of designer Doug Chiang, the N-1 seamlessly fits with the classic Venetian-style architecture of Naboo, creating a visual continuity that brings the planet to life - and shows how much things changed once the Empire took over. As seen in the climax of The Phantom Menace, the N-1 is a fine starfighter in battle, and is one of the prequel trilogy’s most famous craft.

This is a nod to the fact that he is not a hunter anymore. His character has evolved from a strictly creed following hunter to someone who changes his beliefs. He has removed his helmet for Gorgu couple of times, he is warming up to droids and he hasn't picked up any work for money since season 1. I think in season 3 we will see him evolve into a reluctant leader of Mandalore and the N1 starship will make a lot more sense as his primary ride.

N-1 Starfighters and Pod-racers shared a remarkable resemblance when the plating was removed. Not surprising that Anakin Skywalker was able to intuitively pick up it's characteristics.
Real world relationship: the "cryogenic density combustion booster" has a counterpart in old school hot-rodding where an enclosure around the air intake would be filled with ice to chill the air so that it was denser and had more oxygen per volume. True story!
