  • In this video, I'm bringing you along on an overland 4x4 trip out to the badlands, near the Anza Borrego Desert. While we were out there I cooked up a picanha on the SnS Travel Kettle. This trip was the maiden voyage of the Taxa Outdoors Woolly Bear off-road trailer I purchased recently. My thought is to start doing these 4x4 adventure cooking videos when I go out. Hope you enjoy!

That charcoal I believe is called Bichotan and it’s a pain to light up. But burns hotter and longer than normal. It’s just a pain to use.

It’s binchotan charcoal mainly for yakitori. I use it every summer in Japan for bbqing chicken and it adds amazing smoke flavor. My trick is to stand them up in a chimney starter on top of coconut charcoal pucks and light kindling from underneath and let it sit until they’re glowing red.

How you slice depends on how you are planning to cook it. You only slice with the grain if you are cutting thick strips and using a skewer during the cook. Then the person eating will be cutting it against the grain for each bite. Cooking it as you did, as a roast, you slice it thin against the grain.

The PKGO with the flip kit gives you 2 hibachi grills in one or with the lid in place a mini PK360 for reverse sear or indirect cooking in a small cast aluminum cooker. The grates are impressive as is the grill. The PBC mini would also be ideal for all kinds of “Overland” cooks! Love your channel Greg! You were my inspiration for getting a Golden’s Cast Iron Kamado and I have no regrets. What a cooker! Golden’s has a mini Kamado also that would rock the “Overland” cooks!

Anyone from NE ohio? I've been looking for picinaha but no luck. My local meat shop was going to charge almost double what I use to buy it at in L.A. because it was" a special order" no brazilian stores here either . 😕
