- Argentine Grilled Ribeyes, or "Gaucho Steaks," it doesn't get any better than this. I thought this was the perfect way of breaking in my new Sunterra Pro Series Argentine Grill sunterra.pro and it was! four cowboy cut ribeyes, weighing in at about 2lbs each! Marinated in an Argentine steak marinade, grilled, and topped with a homemade red chimichurri sauce!
Marinade Recipe:
1/2 cup olive oil
3 tbs red wine vinegar
8 cloves crushed garlic
1 tsp each, black pepper, ground cumin, salt
1 tsp New Mexico Chile
Red Chimichurri Recipe:
12 cloves roasted garlic
2 shallots
1 cup olive oil
1/4 cup red wine vinegar
1/4 cup cilantro
2 tbs smoked paprika
2 tsp New Mexico Chile
Blend all ingredients well

As an Argentinean currently living in argentina, just say kudos for this result!
That was a pleasure to watch. I hope to see more cooking on that grill, the way it combines practicality with old time wood fire cooking is ingenious.
Dude that was an extremely fun video and cook. Great walk around of that sweet cooker, incredible sides and Chimmichurri but wow that steak! Really enjoyed this one, brother!
I really like that grill Greg. I like the two independent grates and I really love the placement of the bresero. That was well thought out! Brother that is as primal live fire cooking as it comes as you said and by far my favorite way to cook. True fire management! KILLER looking dinner!
The smaller of the steak.... “the runt”... would feed a family of 5 ..... classic... love it!!
we used to enjoy argentine beef in the uk back in the 60s then they joined in the european fiasco / mafia and then the joy of life & freedoms were lost! plus the beef
I've had to work through the weekend. I have an 11 month old. I'm exhausted and don't want to do anything. Suddenly I flip to your channel and I'm reinvigorated and filled with joy. I black out for a moment. I open my eyes and some how I'm at Iowa Meats on Mission Gorge buying a dry aged ribeye. I black out again. Somehow my charcoal grill is at 250 degrees and ready for a reverse sear. Thank you for being the inspiration and local dude you are. And thank you for serving our east sd community.
Wow! Softy side of Ballistic BBQ! Amazing cook and the Rib Eyes ARE BEYOND BELIEF! I think this is the best video yet on your channel. Kind of nice the emotion you put into the cook and thanking your neighbors for their help with that fantastic new grill!
For some unknown reason I haven’t been subbed even though I’ve been watching your videos for months. Well, this one finally got me to stop being silly and hit that button! Absolutely loved watching this whole process. Great content man.
I'm in love with that grill it's a piece of culinary art.
Never seen Greg so stoked. I'm happy for you, bud
Great video! Thanks for allowing us to see you experience the grill for the first cook! Also thanks for sharing the recipes! The grill really looks like a great setup!
I've been watching your videos for a couple of years now. They are just great to watch. 300k subs just doesn't seem right. You should have millions. Hire someone to work on your brand and to bring you to the next level, you have the personality and the skills to do so. Much love from a fellow Argentine who lives in Australia.
Great video Greg! Thank you for appreciate the type of grilling we have in my country Argentina. Keep posting videos with that amazing grill. Take care!
I RAAAAAARELY ever grill, but I love watching your videos. Anyway, it's fascinating how educated you are about the stuff you're talking about.
The master does it again, conquering all technics. I like how chimichurri recipes change, just like bbq. Everyone has a take on it.
Quickly becoming my favorite youtube channel. Great job again Greg. Love the variety.🖒🖒
I been watching you for years and I think you are one of the best teacher and pitmaster on youtube and I applaud you

Greg, I loved this cook. Absolutely awesome, one of your best ones yet.
Greg,
Wonderful video. Congratulations on your new grill and thank you for sharing. Going to start researching this unit too. Thank you!!!
it's always nice to see some "tribute" to my country. Still remember the "Matambre a la pizza" video... keep up the good work!
Thank you very much! I have much respect for Argentina!
I'm sure you have lots of fans here in Argentina, I seriously improve my burger cooking skills because of you Greg! Greetings from Buenos Aires!
Ballistic BBQ im from argentina and that means a lot thank u greg
Mann, what I would give for such a grill here in America. I've been doing asados in the parks using two grills: one just for the fire, the other for the beef. Still: remember that these grills take more time to heat up, so don't rush in putting the beef on. In the ideal argentine asado, you take your time in every single step (except for rubbing and seasoning, that's not our thing)... cheers!
@@brunoaramburu740 the grill he's cooking on ships to America... It's made in Mexico, but the company is based in America
Lol I enjoy how excited and happy this guy was it’s been a while for me that I’ve been that excited put me on in a good mood enjoying life 🍺
Loved the video and I will check into this grill. Thanks for your continued work, you are appreciated! Thanks!
Clap Clap Clap. Finally the argentine grill came! I hope you can enjoy an asado on this style. Greetings from Argentina.
I've been watching you for years. I've recently noticed your videos getting better and u seem more happy. A different vibe going on and I'm still enjoying your videos. Plus the beard is a good look homie ahah
thank you. I followed every single step you mention in the video and it was P E R F E C T delicious
Holy cow Greg (pun intended), you are killing it with this cook. Best steak I ever had (including Peter Luger and Ruth’s Chris) was at Gaucho Parrilla Argentina , a meat-centric restaurant in Pittsburgh. Nothing is better than a good steak cooked over a real wood fire. Your new grill is the bomb. I’ve been looking at getting something similar for when my outdoor kitchen is finished. Good to see the goatee is back.
in Argentina that smell is felt every weekend in all neighborhoods! :D
I saw these steaks on Fred Flintstones car back in the 1960's!
Tom Davis probably rotten by now!
Hahaha! Thats funny! Thank you for that laugh!
😂🤣😂...had me ROLLIN w/ this comment. 👍🏽😆
Except back then it was Brontosaurus steaks and these are beef 🥩 😀
Mammoth tomahawks theys were 😉
Hey Greg! I've looked at these and everything about this rig is top shelf awesome! Can't beat live fire cooking......so cool! 🔥👍 \m/

Wow Greg! Great looking grill buddy! Those steaks looked fantastic. Nice job!👍🏼
That griller looks amazing 🙌🙌🙌
Looks delicious. Really enjoyed watching you cook.
Your backyard is bbq heaven, keep up the nice vids brother!!!
Hey, Greg, was there any effect on the back steaks given that they were closer to those logs burning in the rack? Seems like they'd be a little more done, and maybe a bit uneven, but it's hard to tell exactly how close those flames were.
great video but please move from the wooden fence I wont sleep tonight
Who can dislike this video??? Awesome video bro, keep up the great work!!
I've been looking hard at one of those. Looking forward to seeing more of this!
Fantastic video as always!!! 😎👊🏻🍺
I'm building a vertical offset smoker now, but now you've made me want to build one of these Argentine grills! Nice job on the steaks by the way! 🥩🥩
Congratulations on your new grill. It is a beast. I would love one like that.
Looks fantastic, I feel your glee!
Fantastic grill Greg. You're getting all the cool toys lately. Great video.
Loving the rub recipes. Great looking grill!
I’m impressed. Great looking grill.
Thanks for the video, that is a beautiful awesome grill, congrats.
Long time watcher. I always enjoy your videos and get some great helpful hints. You mentioned about doing a first burn to also help season it before using it to cook. I've actually never heard of that. Maybe you could do a video to show how to prepare your new grill before using it? Thank you and look forward to many more videos from you
That grill is awesome. One more thing on the wish list. BTW: Those steaks looked killer. Another great video.
Thank you for watching Douglas!
Thanks! I appreciate the salad recipe. Great Video! I have a 24 x 48 Santa Maria grill. So much fun. I primarily use red oak cause of its abundance where I live. I also really like mesquite. Give that type of wood a try.
This video was great! Looking forward to more adventure cooking videos with the Woolley Bear!
I've been looking at various Santa Maria and Argentinian styles grills. I HAD thought about going in another direction, but not now. The food looked great and the cook looked like a lot of fun.
Excellent grill and good cook man, cheers!
Looks delicious! "You never knew you liked chocolate till you tried it" is something I'm gonna be saying more of now, thanks for that Greg.
Argentina and Brazil are like grilled meat paradise. They know they're stuff. Love watching what the guys over at LocosXAsado.
Very nice grill thank you for the video nothing like cooking an outdoor grill food looks great 👍🏻
What a great grill. Looks like you can do everything from a very simple to an elaborate cook. You do such a good job explaining the grills and the your recipes. I learn so much watching your videos. Thanks for answering my questions when I email you at ballisticbbq.
Thanks so much! Cheers Paul!
I am from Argentina and I appreciate that you show the ways and customs of how we roast meats, just a difference with the original chimichurri, which you recommend. Chimichurri is a sauce created in Argentina more than 150 years ago. Therefore you recommend Mexican products, such as cilantro, Mexican onion, Mexican chili. (?)
Of course you can use them but it is not the same taste. What looks like is not the same. Thanks.
This is a really impressive grill. It's just like you say, control the fire, that's fun. The steaks are perfect again anyway. Great job as always 👍👍👍
NICE! I love your new tow.
All you needed was a great bottle of Malbec ! Cheers! Love that Argentine grill
Awesome grill and cook greg. We’ll see you in a bit! Cheers.
Can’t wait to see this grill in action again
Oh man, I would love to have that grill. I love the rack that allows the coals to drop. That is similar to how my Granddad taught me to barbeque hogs. We would take 2 big oak logs and lay the wood to be burned for coals across the logs. As we needed coals in the pit. I would take a shovel and scoop up coals and spread them out as needed under the pit frame. The concept is exactly like you have with your grill. Nice meal by the way.
Great video as always Greg! Making me hungry for my dinner tonight lol!
Thanks for checking it out Scott!
Great video Greg, those steaks looked amazing! Actually the Bi-plane is a trainer from WW2. Boeing Stearman Model 75 😉
Great video man! I myself have a large Argentinian grill here, are your grates stainless steel? What about the heat behind the grill/brasero, I see it’s pretty close to the wood fence, I have mine about a foot away and does fine
