Carbonara is one of those things that has to be made from scratch with fresh ingredients. It doesn't even take that long to make!

I agree. He is the least snobbish Italian that I have ever seen, especially when it comes to food. He seems like a very nice man.
He was nice but he very clearly didn't like anything and didn't hold back the thought.
When he was pouring the sauce over the meatballs I felt like I was watching Kitchen Nightmares.
But I think he did restrain his demeanor because he knew that _they_ knew it was all bad.
I love that the chef that cooks for the most famous people still have an unrivaled sense of humor.

That's true that we don't eat pasta with meatballs in Italy, but in Teramo (Abruzzo) we do have something similar called "chitarrine alla teramana" that is a kind of handmade spaghetti with tomato sauce made by nonna (from 6am) and small meatballs (pallottine), it's a must try!
Adding a basil leaf definitely makes it more Italian.
