I made borscht for the first time on the weekend.
But decided to really intensify the beef broth flavor by pressure cooking the beef with herbs and aromatics, beef broth cubes etc and water.
Strained the broth and let cool and refrigerate to take out the harded fats.
I wish I had made this before, it has become one of my most favorite soups. Already planning to make it next week.
    Update:
    Since making this over 3 months ago, I have made it 5 times..including today...December 30, 2022.
Praying for peaceful resolution of the conflict. Very challenging because of leaders of USA/UK/CAN/EU interference.

Sounds delicious, but wouldn't removing the fat take away from the flavor? You don't remove the fat from a pot roast; I don't anyways. If I were to leave the fat in, would it ruin the dish?

Borscht is not a russian soup. It is a Ukrainian national dish. And in Ukraine we newer look at Borscht as at a kind of soup.
There are many different recipes of Borscht. All of these recipes can be grouped into 4 groups: Ukrainian Red Borscht, Fermented Red Borscht, Green Borscht, and White Borscht.
russians managed to announce only Ukrainian Red Borscht as their invention. I'm not sure if they heard about another version of Borscht. Once they will hear about these versions of Borscht, they appropriate it also.
russian Borscht it is something like russian sushi or russian pizza.

Borscht has been known since the times of ancient Rus', even before the ancient Russian ethnic group was divided into Great Russians, Belarusians and Little Russians. After that, borscht entered the cuisines of these countries as a national dish equally for all three countries.
