Quick question - I have something similar to this. Trying to figure out the fine line between having too much flame hitting the bottom of the evaporator pan vs not having enough. ie, how much damage is done to the bottom of the evaporator pan over time if have constant flame on it? as seems I'm not getting enough "boil" and more of a "steam" thing for me.
The key is to find the sweet spot of air / wood mixture in the burn area if the barrel ...i try not to stuff too much wood. I have not seen any damage whatsoever to the bottom of my pan while on a constant HOT HOT fire and full boil! I get small amount of flames up the chimney, if that gives you an idea. I always try to get it has hot going as I can. 👍

20x30 pan...works well. I can get about 5 gph boil rate if i keep it cranked on steady heat and regular pan cleaning. Gotta scrape the bottom of the pan ever so often to keep soot level down.

The sap pan is perfectly level 👍 i have to level it every year when i put it together or else the sap doesn't evaporate efficiently 🍁

That is high temp 2200f rated insulation that closes in the air gaps around the pan for more efficient burn 👍

Using softwood may benefit as it does not produce coals like hardwood does.
Ive switched to burning pine. Makes a heck of a difference
