Headcanon: Captain von Trapp uses guitar as one of his coping mechanisms after the death of his wife, and wrote Edelweiss in her memory. It's why he always seems to be emotionally repressing himself when he sings it, because he doesn't want to think about his dead wife and get upset in front of his children. Also, Liesl is the only one who knows that he wrote it for her mother, which is why she sings along in the 1964 film.

It’s not about his wife. It’s about his country. He is a real patriot.
He stopped singing when his wife died but the song is not about her.
And he’s emotional the first time because he realised that, with Maria, he’s able to sing again. And the second time because he knows that he can’t stay in the country that is his and that he loves so much anymore.
I think he hopes that the country won’t loose his identity because of nazism.
