The food and agriculture system plays an important role in our affect on the planet. changing that for the positive starts with chefs like you taking initiative to make smart decisions.

Squid: I useto make fun of that stuff which pissed my mum off because the way she would prepare it by calling it "Goodyear Tire fish". She useto get so mad at me when I asked her if she was making "All Season tread style" or "Winter tread style"

Nice! Can't beat fresh squid, I usually go squidding a couple times a year at Edmonds Pier here in Seattle area. Mac & Jack's is awesome, their Amber Ale is a staple in all the PNW restaurants, also like the Serengeti wheat.
9:36 I imagine that squid being pulled up out of the ocean to his ultimate horror. Yanked from his home only to see his friends and family hacked to bits and served with hot sauce before himself being murdered. Halloween vibe in full effect.

question - with most fresh caught fish they usually advise freezing for x amount of time - is that different with squid? are they less risky when it comes to parasites?
Awesome awesome video! I'm in the bay area and I want to catch some squid more than anything else right now, but I'm stuck on land. Is it possible to catch squid from piers around the area or in the bay itself? I've heard of people getting them off piers a bit further south like in Santa Cruz, but never from around here. I'm thinking maybe pacifica at night with some lights on a rope, but I'm not sure. If you have any insight on how to target these for those of us without a boat or kayak, that would make for an amazing video.
