    Base Ingredients:
    Chicken of your choice (Recommend 5 or 6 bone-in thighs)
    2 Quarts of water
    1 Large onion chopped.
    4 or 5 stalks of celery chopped.
    4 or 5 carrots chopped.
    1 Tablespoon salt
    1 Tablespoon garlic powder
    1 Tablespoon onion powder
    1 Teaspoon pepper
    1/2 Teaspoon Thyme
    1/2 Teaspoon Oregano
    Red pepper flakes
    1 1/2 to 2 cups of heavy whipping cream
    1 Tablespoon of Tony's (or your favorite spice blend)
    Dumplings Ingredients:
    2 cups AP Flour
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/3 cup shortening
    3/4 to 1 cup of buttermilk
    I forgot to buy buttermilk and did not have any regular milk. I improvised with 1/4 cup of the chicken broth from the pot and 1/2 to 3/4 cup heavy whipping cream.
    Cooking:
    In pot combine Chicken, water, onion, celery, carrots, and all the above listed spices, bring to boil.
    Reduce heat and simmer for an hour.
    Remove chicken, cool, and debone.
    Return stock to a boil.
    Add dumplings, reduce heat and simmer for 20 minutes.
    Add chicken and heavy whipping cream and simmer for 5 to 10 minutes.
    Dumplings:
    Combine flour and above listed spices.
    Work / cut in the shortening.
    Slowly work in the buttermilk.
    Roll out dough to approximately 1/4 inch thick.
    cut into you preferred shape / size.
    Dust pieces with additional flour.
    Fantastic with cornbread, garlic bread, or garlic knots. Or even some crackers.

    Looks great. My favorite kind of dumplings, don't care mutch for the kind that looks like a biscuit on top.
    For an alternative I like the idea of the perogies. I have used potato gnocchi before, also very delicious.
