    My Granny lived thru the depression. Her family were tobacco farmers and had cattle and horses. She always said she never saw the difference in depression times because they never had any money to begin with. She made the best chicken and dumplings I ever had. Dumpling big and fluffy inside. Thank you the video took me back in time for awhile.

      James I know how you feel I just lost my mom and dad at the same time three years ago and my mom's mom/grandma
      in 2000 and before grandma passed away when she still was cooking she was a good 👍 cook and grandpa passed and you could tell her heart ❤️ was not in it anymore.

      the depression was mostly in the cities. The lyrics from Song of the South by Alabama is true " someone told us Wall Street fell, but we were so poor we couldnt tell" The "poor" rural folks were better off then those in the cities, they may have not had many material goods but they had land, crops, and livestock.

      @@92bagder yep rural folks already grew or traded for most all of their needs. My great grandfather and great great grandfather got a contract cutting cross ties. They hauled them to a rail spur in wagons and loaded them by hand in box cars. They never went hunger but it sure wasn't for the weak of heart.

      James Young. My grandma and her sisters would get together and us kids would be amazed at what they did, how they talked to one another and they would give us sips, puffs or dips. One used to bring 5 one gallon jugs of Muscadine wine. Another would bring a jug of clear whiskey and their whole deal was pinto beans and cracking cornbread. We were always told to go play but we always found ourselves sitting Indian style on the ground listening to them talk. They all were born around the first decade of the twentieth century and we were school age and even before it was interesting hearing your grandma and great aunts saying all the dirty words and calling each other a bitch. It was fun to watch. They acted like we did to one another with love and laughter toward one another.

    Kent-My father was raised in the depression . Told us kids that for one year all they had to eat was tomatoes. They ate tomatoes for breatkfast, lard and tomato sandwiches for lunch, and boiled tomatoes for supper. That my hero, is "getting by". Ended up in the Aleutian Islands for the entire campaign in WW2. Came in to Dutch Harbor on June 2, 1942 and left in Oct of 1943 from the island of Kiska. He was in charge of the kitchens during the campaign. He was a tough man. Fought the last 2 hours of the the Battle of Attu hand to hand. These are the men and women who lived at that time. They never complained, they just took what they had to and moved on. Keep up the good work, and thanks for the recipe, and for your tribute to the generation that went through it all.

      I knew someone who ate NOTHING but tomatos like that and AFTER the depression to this day WONT EAT TOMATOES ! NOT EVEN KETCHUP !

    Brought a tear to my eye.
    My grandpa was born in 1905 and my grandma in 1913.
    As a little kid in the late 70s, I did not recognize the gifts that I had in front of me at the time.

      @trevor69er59, don’t be too hard on yourself, I was the exact same way when I was a kid, just selfish.
      Children aren’t mature enough to understand how important it is to not take good people, or situations for granted unless these things are taught to them at an early age.

    My mother and her family were from Bama. Her parents lived through the depression had a bunch of kids (free farm labor). They didn't put veggies in chicken & dumplings either and they didn't use corn starch. They made rue with course ground corn meal. The finished product was less like gravy and just a thick, brothy soup. Chicken & dumplings for supper, the next morning a warm mug of that soup! My grandfather worked all day on the farm, a huge garden, and a bunch of chickens. Then, he worked the third shift in the coal mines and always carried two peanut butter sandwiches in case of a cave in. My mother would meet him halfway and walk him home. She would eat his second peanut butter sandwich on the way home. I lost mom in December 2019, so now I'm the curator of all the memories as I'm the last family member, so I share to keep the knowledge and family alive. It's been a long time since I made chicken and dumplings. Sounds like an entry on the "to-do" list!

    Chicken and dumplings is one of my favorite dishes.
    One of the luckiest things for me was having parents, grandparents and great grandparents who instilled a sense of gratitude for the basics and an understanding that everyone doesn't have food, fresh water and a safe place to live. If you have those things you have everything.

      Parkwood 633 - Spot On! My parents grew up poor during the Depression. They both joined the Navy in 1941. (My mother was a WAVE) Mom always would say, "I have a roof over my head, plenty to eat, and people that love me." Dad would say the same. Both are gone now.......... Boy, Mom could sure make up a big pot of chicken and dumplins' !

    My momma made dumplins for 50+ years, light and fluffy best things ever! Not until about 5 years ago I realized she doesn't even eat them. Now that's love and devotion to our large family. She rolled out and cut every one. It's quite a mess to clean up but she did it for us and did it well, thank you momma ♥️

    My mom and dad were born in 1914 and 1915, and we had a hard time in Arkansas, so my dad took us across the states working in the fields until we finally settled in Clovis California in the 1949. My mom made a lot of southern meals and chicken dumpings was a big part of our meals. Good memories.

    My mother and both grandmothers made chicken and dumplings. They didn't put the carrots and celery in them. However, they were DELICIOUS! I've never been able to make chicken and dumplings that taste near as good as theirs.
    Any of you younguns out there, get your parents and grandparents recipes. Because one day, you will miss them.

      The closest I’ve got to grandmas is boiling an organic local farm chicken for the stock and using buttermilk, it’s easy to skip the buttermilk step, but I think it is important. The organic broth turns to jelly when it’s cooled because it’s so rich with collagen…mass production grocery store chicken is lacking the collagen levels for some reason.

      I agree. My (late) paternal grandmother taught me how to make pierogies when I was a child. Both of my grandmothers were excellent cooks and bakers, as were most of my aunts, and my (late) mother. Cooking an baking are valuable skills to have. I do wish I had my grandmother's recipes for her homemade borscht (beet soup), and her homemade cinnamon rolls. Those were so good, as were her homemade doughnuts. Food does bring back memories, and it's important to keep culinary traditions preserved. Cheers!

    I’m from Australia but had the privilege of eating this dish for the first and only time at a friend’s grandmothers house in Shamrock TX and I’ve never forgotten it.

      My wife and I talk to our 2 house cats, and the 2 stray cats we take care of.. (who stay inside the 2 season room) as well as the squirrels we feed, and the raccoons , possums, and skunks,. They understand what we are saying... They all are way smarter than people give them credit for. One of the squirrels we are in the process of teaching and learning hand signals

    My grandma a southern woman from Corpus Christi born early 1900s used to make the best chicken and dumplings. Papa was a farmer so we had fresh veggies every meal and meat bought from Piggly Wiggly. Love southern cooking.

    I have made many recipes from your channel and a few from the book.
    The classic (?) chicken and dumplings recipe is a HUGH hit. I took liberty adding carrots, celery, and sometimes corn.
    I am glad to see you are re-visiting this recipe and adding a few things to it.
    I am a Retired Combat Veteran, and I love that you fly the American Flag and offer your gratitude at the end of EVERY video.

      My best friend gets uncomfortable when people thank him for serving, so, no offense, but I won't out of respect. Civilians don't know, never will... hopefully. But, he is amazing and seems so kind and happy and he makes me proud to be American. Not a lot of people in the world can legit bring pride, joy, and knowledge to the table... usually you'd be picking 2 of the 3.. I always wanted to live in a big city. But he makes me realize I kinda belong being his neighbor for some reason... he's home... he's america.
      Also, the battle a lot people don't know is coming back home. Much respect to you and a different, but equal, respect to the men and women who didn't make it home. The world is not nice, but you all make sure it's a little nicer while we complain about gas prices. Take care, for real.

    I never throw out the chicken skin, it has the most chicken flavor. I mince up the skin and put it back in the pot. Also, I bake my skin on and bone in chicken with seasonings first. I usually freeze them in vacuum seal bags until I am ready to make chicken and dumplings. Baking the chicken versus boiling raw chicken gives a stronger and more flavorful chicken broth. I sautee a little bit of chopped onions and celery in butter in a pot before I add my defrosted baked chicken and water. I add a can of chicken broth if I need a lot of broth (I prefer a lot of broth because I make big fluffy drop dumplings). Anyway, just wanted to share another way of doing chicken for soups or dumplings. Now I need to eat. LOL

      @@TheMopardodgegirl Thank you. I purchased a bunch of chicken thighs and leg quarters that were marked down and stayed up to bake them all. I forgot to mention that I also will remove the meat from the bones, package & freeze them for either salads, tacos, or enchiladas. I just discovered a fantastic chicken seasoning also. I had never heard of it and tried it last night. I have to confess; it was so good that I ate a few pieces of chicken because they were so good. It's called "Kinder Rub Buttery Poultry Blend." The recipe I use for my big fluffy drop dumplings comes from a cookbook my Mom got back in the early 50s. I hope you will discover how much time and clean up it will save you to cook some meats ahead of time. I also cook pork shoulder roasts, shred and package in individual packages. The best way I have discovered to keep the meat moist, tender, and super flavorful is to season it, double wrap it in foil, put in a crockpot (no liquid added), and cook for at least 12 hours. By eliminating the water, the meat cooks in its own juices so that the meat is seasoned even in the center. I found that adding water tends to boil out the meat flavor and seasoning. Once the meat is done and cooled, I remove the meat from the pot, shred it, remove some of the liquid from the pot (I save it for soups/stews or to make gravy). I like to leave at least 1/2 inch deep of broth in the pot. Return the shredded meat to the pot, mix so all the meat has a little juice, then package and freeze. The meat can be used for BBQ pulled pork sandwiches by adding favorite BBQ sauce, or use for tacos or enchiladas. So many uses, but by cooking all the meat at one time, saves so much time when cooking a meal. I'm sorry. I babbled too much. I would delete it, but I guess I will leave that option to you.       @@TheMopardodgegirl I don't think it would be right for me to share the recipe I use on this channel. I have too much respect for him to do that. I am so sorry. I also forgot to mention, when I shred the meat from the bones, I put the bones in a freezer bag and put in the freezer till I have enough to make a batch of chicken broth. Usually, like I do with some of the leftover juices I have after baking a ham or roast, I pour them into ice cube trays and freeze them. Once frozen, I remove them, put them in bags, and put back in the freezer. I use them when I make gravies or add to soups/stews or making a meat dish that needs an extra kick of flavor. I am on a limited fixed income, so I make sure that nothing goes to waste and all my dishes have lots of flavor. I don't know if this helps anyone or I am just a babbling old lady. LOL!!

    My mama still makes the best chicken and dumplings I have ever had (of course) She does it the way she was taught to make them from my Granny. She starts with a whole chicken. She makes them every year for me on my birthday because she knows its one of my favorite meals ❤

My mother in law made us chicken and dumplings up in Wisconsin one summer. There was love in every bite. She cried at the airport when we had to leave. She's gone to glory now. I love you Loyce.

      People of today could learn a thing or three. I madeit through the late 80's with a newborn son, living off simple meals like this. yeah I might have caught biscuit dough on sale and used it as a quick dumpling, But the pot was always clean afterwards. Thanks Kent!

    I’ve made rabbit and dumplings a couple of times and it was sooooo good!
    I do remember going to Epcot with my grandparents back in the mid 80’s. There was a dust bowl exhibit. It was the only time I ever saw my grandpa cry. He and my grandma grew up in central Oklahoma.

    Wow! I just have to say this video brings back lots of good memories. My mom ('30) and papa ('27) were country folk born and raised on farms in Milam Co. Texas. Mom got her recipes from her mom. What made me smile while watching the video was when you were making the dough. My wife and I still have pictures of our three boys making dough with their MeMa. She had to put stepping stools by the kitchen table, so they could be high enough to sling that flour! Boy howdy, did they ever make some messes. Their little faces, blonde hair and clothes would be covered in flour. Papa would always tell those boys, their chicken and dumplings were better than their MeMa's. Mom passed away in 2021 and our boys are in their mid to late 30's now, and they still cook up some of her recipes! Thanks for the video.

She sent me that for my birthday (around 7-9 years old) and I was so pumped when I got off the bus that I had that monstrous bar of chocolate waiting for me at home. Couldn't wait to open. walked into my room and it wasn't on my little desk where it was that morning. It was on the floor shredded, most of it missing, wrapping and foil everywhere. our asshole beagle! LMAO. I was soooo pissed off. And, btw, apparently no ill effects eating all that chocolate.

    My Mom used to save backs, necks and wings for her dumplings. (No big chicken peices, those were fried up for a previous meal.) After cooking pull the meat off the bones, put it back in the pot. She made the dumpling without butter and thinned it to a thick batter that she spooned in a little at a time.

    Man! I came up pretty poor in Alaska, but my parents were from south of there and my mom made Chicken 'n dumplins for us. She didn't add cream, it was more like thick chicken soup with dumplings added. That said, I don't think I've had it since I was young and I am looking forward to making this soon. Thank you Ken.

    My mom was the youngest of 10 kids she was born in 1928. My grandmother taught me how to cook. Finding ways to feed these kids through the depression.
    She always used a whole chicken boiled, milk, salt and pepper, and drop biscuits. I raised my children on that cooking. My son loved it.
    Growing up we didn’t have a lot. But, but, she could make a good meal out of nothing.
    Salmon cakes or a bowl of cooked bacon sitting on the back of the stove for us kids to run in throughout the day when we got hungry ❤️❤️❤️

    Hi, Mr Kent.
    This is the perfect time for this video, my mother tought me to make this as a kid, it's something that was a classic on the table during those days. Even though her dad was a butcher, with around 14 people at the table every day and especially during the Canadian winters, this was a hearty and filling meal.
    I've mentioned my mother to you in the past, 94yrs old and a retired nurse of 40+ years, sharing this is my tribute to her as she passed earlier this week.
    When she would make this, she'd make the larger, raised dumplings which were plump, tender, essentially steamed biscuits as she'd put large spoonfuls of the dough into the waiting pot with everyone else already in the pool and then the lid went on for a full 30 minutes and if you reached for it before then, you'd get cracked across the knuckles with a wooden spoon. 😆 "You'll ruin my dumplings... And I'll ruin you!" hahaha. But when the lid came off, the thick broth, tender chicken and heavenly dumplings wrap you in a warm blanket of love. She'd season the dumplings with herbs and the broth was perfectly seasoned and spiced, as well.
    Aftercthe first meal was gone, the second was just as good as she'd put the pot back on, add more dumplings and 30 minutes later, voia la! More perfection.
    I've had all variations of this dish, the hard, little dough balls that they call "dumplings" in different areas just doesn't cut it. Maybe they didn't have the patience for it and it got lost over the years but, this is a classic! Just make the biscuit recipe on the box of biscuit mix then put large table (desert size) spoons of it into the pot, makes a half dozen or so large dumplings (you can adjust the size, we tend to make them bigger) and when you serve them up and ladle a big helping of broth over that fluffy cloud from heaven, you understand how the slight amount of chicken can be forgiven. 😀 Today, we use as much as a whole chicken in that pot, lots of leftovers for future meals that can be canned or frozen 😉
    My mother was a wealth of cooking knowledge, including cooking for the whole bunch at round up and slaughtering time and your shoes reminds me of that all the time...
    Thanks for keeping me in touch with such great memories. ❤️ I'm sure I'm not the only one here who feels that way.

    My dad and his siblings lived through the Great Depression in Alberta, on a farm. So did my (late) mother's family. I'm sure they were aware of cooking that would make things go farther. Their parents had to be very resourceful, like many families had to be, back then. That is some really good classic country cooking. Cheers, Kent and Shannon!

    My Mom is going to make hers this Weekend with my Left Over Apple Smoked Whole Chicken, She uses Bisquick because she's Canadian and that's how she was taught... she also uses lots of Carrots and Celery and Onion and any other Veggie depending on how many people need to be fed, some fresh Thyme and Rosemary really make this an Over the Top awesome Meal.

    My Grandparents on my Father's side lived in Southeastern Poland until the Wearmach insisted that they move to Western Germany near the Denmark border. Home made pasta and dumplings were part of every pot of soup and stew. Pierogi were a common side dish, we grew rabbits in the basement and all my Aunt's and Uncles went to a private Catholic School. It never dawned on me that we were poor. Every grown man in the household worked at least 2 jobs because they all had too much time to themselves. If you weren't working at least 2jobs and going to college, you were going to Vietnam. That's how the world worked back then.

    Where i grew up we called that drop dumplings which was very easy and fast to make but I liked them more when the dumplings were rolled out and cut into rectangular shape (almost like noodles but much thicker ) . My mother would make this almost every other week and never had to say it twice that dinner was ready ! I have 7 other brothers and sisters so seconds were a little scarce !

      That's the kind I grew up helping my mamaw make since I was a small child. We never put milk in ours either and cooked them in just the broth from cooking the chicken. We made the dumplings from flour ,eggs and broth . I will have to try these .

    My Grandpa made the best chicken and dumplings and he served it with this real peppered rice that he always cooked perfectly. The only twist was his dumplings were more like long and thinner almost like pasta but still were thick enough to hold up and not turn mushy. I miss that man so much I would give anything to be able walk back in my Grandparents old house about 1:30 on a Sunday afternoon seeing him cooking and hearing whatever NFL game he was watching and him give me a big old hug. Thank God my Grandmother is still hear, I miss you Grandpa and yes unfortunately the Falcons still suck and the Hawks are as inconsistent as ever but the Braves and Bulldogs both won a Championship this past year.

    When I make chicken and dumplings after coating the chicken in the flour mix I pan fry them about 3 minutes on each side and then put them in a pot to boil for 25 minutes before adding the dumplings. Great flavor

    My grandma made the _best_ chicken and dumplings. I _begged_ her to make it for me every time I visited, I loved it so much. She gave her daughter (my mother) the recipe, but dear old Mom, now in her mid 70s, has _never_ been able to replicate grandma's recipe.
    I fell into the restaurant business in my early 20s, but didn't realize I not only was good at cooking, but that it was my calling, until my late 30s, which is the time you realize you're _too damn old_ to be in the business. I mention this because my dear old grandma passed in my early 20s, and had I realized this fact before, I would have asked her to *teach* me her recipe. (You know why I emphasized "teach").
    Is Momma's cooking bad? No, I'd love to eat her cooking every day --she just cannot replicate her mother's chicken and dumplings.

    One of the best memories I have was of my mom. She grew up during the depression and never wasted any food. With raising five kids alone after dad died (at 51) that was a bit easier, since there was seldom much left after a dinner. If we had a couple of chickens for dinner, or a turkey, she would spend a lot of time after the meal stripping the carcass of every scrap of meat for chicken and dumplings, or some homemade soup. She taught my wife, and I, at 70 am STILL eating mom's soups by my wife's hand and training. Mr. Rollins, this is a GREAT video, and one that brings back memories I cherish. Thank you!

    My parents grew up during the depression. My dad worked his family farm and a neighbors farm pretty much on his own. He was used to 20 hr days getting minimal sleep. My Grandmother would make food like this for him and his Dad to keep them fed well and had enough energy to last all day long. When I grew up, my mother cooked the same way. When I was a kid I tried it and it was soooo good. Haven't had it in many years.. Guess I'll have to try to make it now. Thanks ole timer....now I'm hungry.

    All of my grandmother's recipes were either from the depression or pennsylvania dutch (my family was Amish until a few generations ago). This is something she always made. Only slightly different. Her dumplings were a bit bigger and that is really the only difference I see. One of my favorite dishes. Just holds so many memories for me. Great video as always. So glad to see when you upload a new video!

      Pennsylvania Dutch version tends to use a rolled and cut dumpling, maybe 1/4" thick or so by 2 inch square and is called either bot boi or eintopf, depending on the region

    Kent, I feel lazy, because the last time or two I have made chicken and dumplings (and yeah, my wife will eat it, but she doesn't have fond memories from her youth, so she doesn't cook it for nostalgic reasons, so I make it) I cheat with a rotisserie chicken from WalMart and a package of store bought biscuits and chicken broth. Mine's easier, but yours looks more like what my mom used to make WAY back in my youth. Thanks as always for bringing back great memories!

    Chicken and dumplings was one of my favorite dishes that my grandmother used to make when I was a kid. It was as labor intensive as you’d expect making the dough from scratch and rolling out then cutting the noodles. Good memories!

    Make this a lot in the fall and winter. I'll admit to sometimes getting a rotessire chicken and shredding the whole thing and making dumplings out of bisquick, which is about all it's good for really. I've also started with a whole chicken raw, and boiled it until done, then cooled and shredded it.

      I used to do the rotisserie chicken also, but started buying a whole fryer from the store for like $4-$5, spatchcock it and smoke it for a couple hours, then shred it and make chicken and dumplings with it. So good with a little smoke flavor. YUM!
