    Our local Foodworks had boxes of bananas for $15, too good a bargain to pass up, but they were very ripe, so we had to do something with them nice and quick.
    I made a few loaves of banana bread, and we froze a whole lot for use later! But I also made some Banana bread in jars! - this isn't an 'approved' canning method, so personal comfort levels on this one!
    My recipe for Banana Bread.
    can be halved for a smaller tin, I use a jumbo 900g bread tin.
    500g peeled banana
    150g Olive Oil
    4 eggs
    200g sugar - you can bump this if you are used to super sweet banana bread, but we find this fine, especially if adding choc chips!
    400g flour
    10g Baking Soda
    10g Baking Powder
    couple of pinches of salt
    TBSP Cinnamon - optional.

    I did put a bit of a disclaimer in the description, but when editing I realised I didn't really add it to my voiceover! 'canning' cakes is frowned on by the USDA guidelines, this is very much a 'do what you are comfortable with' kind of a project. It is less of canning a cake and more boiling/steaming a pudding in a jar. Fowlers Vacola do fruit puddings like this on their site and the public here have sort of expanded on it, making things like the date and nut rolls, banana breads and self saucing puddings. It is not something I do on the regular, but it is a kinda neat project for every now and again and I'm comfortable with my methods to do so :D

      It took some work to figure out the baking on the barbecue, there were quite a few misfires, and when I try new recipes I still regularly burn the bottom of things! But it works! and I'm glad hehe :D

    I had an Anne of Green Gables cookbook quite a few years ago. There was a recipe for Raspberry Cordial which I made. So lip smacking good and we all had fun w/ it. Cost a fortune because I bought. The raspberries from the grocery store. But it was fun. I wasn’t doing it for food storage.

      I think its a very european thing, it is not 'approved' via the US board, but it is a common thing in the fowlers groups. It's definitely not a 'long term' storage solution, but it does work for the shorter term and the kids love the novelty heh.

    Well ripened bananas are my favorite, so sweet, your breads, both baked and canned look amazing, would make lovely gifts for family...I like to smash and fry bananas in a skillet with a little honey and cinnamon and spread on toast...I think the frozen bananas thawed for just a couple of minutes tastes like a decadent ice cream, esp topped with whipped topping and sprinkled with chopped nuts, making myself drool here....I love banana bread, but horrible bout baking it, I've become lazy in my retirement years...u are such an amazing baker, queen of the bbq 👑

      My kids love to just grab chunks of frozen banana out of the freezer and eat it lol. So that's super handy! I'm not overly fond of warm banana but I used to eat it cold on sandwiches a lot when I was a kid, and my mum loves bacon, banana and cheese toasted sandwiches lol.

    Banana jam is delicious, it turns a pink colour when cooked. I've never seen a recipe for it but I have bought it at markets. Meg Hollar of the Hollar Homestead has a great recipe for bread, she made a video on it.

    Yummy!! I have to eat a banana 🍌 everyday, if I don’t, I get the worst Charlie horse cramps in my legs. I need that extra bit of potassium each day. Have you ever tried a banana sandwich 🥪 with dukes mayo? Omg 😱 sooo good! It’s a southern thing 😂 ❤

    Hello Nyssa. Once again such an amazing video. There are those in the states who would loose their minds over the cakes being canned/boiled? I see videos like yours and think it’s being done and people are surviving. I love the idea of shelf stable breads.
    Cordials are another interesting thing to me. Love getting new ideas. Thanks again.

      Yes, it is definitely not an 'approved' canning project, but it has been done for a long time in Australia/Fowlers Vacola and I think european countries as well. It's not meant to be super long term, but it is a neat little project! and you can totally tell if it didn't work/has gone bad!
      I really enjoy having cordials on the shelf, its nice to have a change from water when eating a meal :D

    Good morning, banana cakes, muffins and or bread are our absolutely favourite we often bake it prefering the over ripe bananas the most you know the ones that are almost dark brown in colour I also add walnuts to mine. When I'm feeling fancy a simple chocolate icing sprinkled over the top with coconut I have 9 children, 2 are at home still. They have all requested banana cakes for their birthday cakes over the years, that's alot of birthday cakes!! 🤠👍🏼🦘

      Yum, I made a hummingbird cake one year for one of the kids and that was delis! (banana and pineapple) I keep on meaning to make it again but I forget. I'm writing my lists up atm for shopping and wondering what I want to bake myself for my birthday next month lol, I'm thinking I might make something with cream cheese icing even if I'm the only one eating it lol!

    Great idea with the bread in jars. I'd make apricot and walnut instead of banana bread. Not a fan really! The lemon and ginger cordial would be great year round. In winter you could have it as a warm toddy if your not feeling the best. Would love to see chocolate self saucing pudding in a jar! Yum! Gotta love a good bargain

    You should try making banana pancakes for breakfast one morning! Yummy. Does Australia have a canning/preserving authority? I know there is the National Center for Home Food Preservation in the US which we 🇨🇦 reference too. We also use books & info put out by Ball Mason (a Canadian company). The North American sources discourage canning items with even small amount of flour, let alone cakes. Just curious if that is a concern there at all. 🇨🇦❤️

      No, we don't have one :). And the theory is that we're cooking steamed/boiled cakes in jar, versus 'canning cakes' (I did put a bit of a disclaimer in the description :D) I think its a very European thing and it is a Fowlers Vacola thing as well, though it was mostly used for things like suet/plum puddings, it is something that is common in the Fowlers Groups, but it is totally personal comfort levels of the individual as to whether you are comfortable trying it!
      I did realise when I was editing my voiceover that I didn't give my normal disclaimer there about it not fitting the US standards etc :D

    Here in Norway we drink a LOT of cordial (all of Scandinavia really). It is the main type of drink for most children and we use a LOT less sugar compared to other countries like for instance Britain. When we're there visiting hubby's family I have a problem finding one that isn't sickly sweet. Either it is too sweet, or if I water it dovn to my sweetness preference there is hardly any fruit flavour. Sugar levels are really dependent on habit. Everything else, cake, ice cream and even sweets are also too sweet for me outside of Scandinavia. It's really strange. 🤔

      It’s definitely a familiarity isn’t it, and the cordial can be a hard one, balancing the taste of the fruit with a hint of sweetness without it ending up too acidic hehe, but we love them, they’re just so nice to have as something other than water!
      When we lived more metro and had other kids visit a lot would turn their nose up at our ‘sweets’ that my kids were fine with but just weren’t sweet enough for them.

      Yes, it's probably a 1:10 mix, I think most of them say 1:5, but we don't drink it that strong. We fill our soda stream bottles to the line, fizz them, and then just add the cordial up the neck of the bottle, and that's the strength we drink.

      Oooh, thank you, I'll check it out. We love the fermented ginger beer! But we had trouble keeping the bottles clean, I'm going to buy one of those ones you push down and it swishes up in the bottles etc, but I haven't diverted funds to it yet, so for the moment, the cordial works lol.

I like any sci fi, fantasy, crime.. anything and everything really, I’ve always been an avid reader. I probably get through 3-7 shortish novels a week depending on what else I’m doing :)

      We aren't really near any commercial style orchards, so I'm not sure what does best here yet. We have planted a half dozen apple trees, a couple of orange trees, mandarin, lemon and lime, some feijoa's, peaches and pears so far, but they're all only a couple of years old, nothing significant on growth as yet, so we'll just have to keep looking after them and see what does best!

      Fowlers Vacola Users is good for FV stuff, but there is an Australian Pressure canners group as well that I browse a lot :D. I am also a member of the rebel canning groups because I like to have a look there when I'm deciding how I feel about recipes :D

      @@OurSmallFootprint traditionally used to bleach the yellowing out of linen and lace so it is gentle, doesn't need to be fresh. I've used it to remove ash and yellowing out of cotton rather than food stuff just by coat the cloth leave it out in the sun for a few hrs then wash it. Would be interesting to see how well it works on food discolouration.

      The pigs love banana peels, that's where most of it goes, I do some fertiliser water with some of them as well and we do shred some up for the chooks to have a bit of, but they're not overly fussed on them. I used to mince them for the worms too, but I accidentally drowned my worm farm :S

      I put a power meter on it when I first got it to assess, it has the potential to draw up 1000watts when cooking/heating, but when I was using it, it fluctuated up a bit when starting to heat, as most appliances do, but dropped down while maintaining, to only the 300-500w mark. When just blending, it uses that lower end as well, but is very powerful, so runs for a shorter time than something lower wattage but less powerful, if that makes sense.
      I don't cook in it super often, and try to do it only in daylight hours, but I feel like it is an efficient use of the power it does draw for the time it saves :D
      We do have it hooked up to a secondary solar array though, not our main house system, so that if there is an issue with power usage then I just don't use it!

      @@Tinachimneycreekfarm I don’t run a slow cooker either it just takes too long, too lengthy a draw on the power, like a dehydrator. Neither is massively powered but it’s the length of time :s. I tend to pressure cook the stuff I would have previously slow cooked on the gas burner.

      Lol, you know, Darryl doesn't like it either, but he finds the canned/steamed/boiled banana bread very mild and tolerable, its odd! :D.

    I'm from Yorke Peninsula SA. Mum used to do a suet pudding in jars. Unfortunately I never had the recipe& instructionsfor it.. My sisters don't have ig either. Is there any chance that you would have that recipe?? If you do I would love to have it.

      There is a Fowlers pudding with Suet in it recipe! It's an old one in lb and oz.
      1/2 lb Currants
      1/2 lb Raisins
      1/2 lb Sultanas
      6 ops Suet
      6 ozs Breadcrumbs
      6 ozs Sugar
      1 pint Milk (Milk may be reduced slightly and 1 or 2 tbsp of Brandy may be added if desired)
1/2 lb SR FLour
      2 Eggs
      6 ops Mixed Peel
      1/2 oz Mixed Spices
      1/2 lb Treacle
      Mix dry ingredients together. Add Eggs, Treacle and then Milk or Milk and Brandy.
      Stir Well.
      2 x packets of Tandaco Suet Mix can be used instead of the fresh suet and flour apparently
      Makes 6 x 28’s or approx 5 x 31’s or 7ish x 500ml jars.
      Needs to be boiled for 4 hours :)

      @@christineensor6362 the one I typed is from an old Fowlers book :) I’ve never tried it! But I had a quick search in the Fowlers Facebook group and it looks popular!

      It probably is the one mum made as it was back in the 50s & 60s. When I actually get to try it out I will let you know how it went & if it tastes like I remember from all that time ago.
