    I use these salts for so many things and have yet to spend the time to throw them all together at once so I could share!
    Bacon Seasoning Salt -
    This is the site I originally used when making it, and it looks like I've ended up at very similar ratios to hers!
    stuffedveggies....
    1 part Sugar - can reduce this if desired, but I suggest trying it at full first
    1 part fine salt - if using a coarse salt and grinding it or a flaked salt you want to double that.
    1 part Smoked Paprika
    .25part Powdered garlic - .5 part if using granulated
    .25 - .5 part Coarse ground black pepper
    .1 - .15 part Sumac - this is optional, and I'm unsure if I'll buy more when I run out, I have tried it with and without and I'm thinking I might be able to find a substitute without purchasing a spice purely for this dish!
    You can add .25 pt onion powder - or .5 if onion flakes, as well, I have tried it with and without and don't really have a preference, this batch I had run out of dehydrated onion, so left it out.
    This is very very customisable, I like a bit of mustard powder in there personally, you can add some heat with chilli flakes, the maple powder is lovely in there too!
    Rosemary, Citrus, Garlic Smoked Salt
    2 pts herbs to 1 pt salt
    This is your base
    Then you can add as you wish.
    I ended up using about 1 pt of lemon peel, this was from the freezer and was curls of lemon peel, so the quantity would vary if it was smaller and zested etc, so start small, add more if you feel you need to.
    I used 1 TBSP of garlic powder in this batch (My '1 part' was a cup), I would have used probably 2-4 cloves of garlic if using fresh, but again that is going to be to taste.
    Mushroom Salt
    nomnompaleo.co...
    85g Dried Mushroom
    220g Flaked Salt
    50g Fine salt
    4-5 small red dried chillies turned into flakes or about 3tbsp chilli flakes
    2 tbsp thyme
    1 tbsp coarse ground black pepper.
    These are the ratios I work with and Darryl likes :)

    I love making finishing salts! My favourite is sriracha salt but it would probably only work for you in winter and not in your hot kitchen in the summer. Other ones I’ve made that I like are
    balsamic (reduction) salt
    Guinness salt
    Garlic, rosemary, chili salt
    Mushroom salt
    I know using a dehydrator isn’t possible for you but that’s what I use

    • @OurSmallFootprint
      @OurSmallFootprint  Před rokem +1

      We can run the dehydrator in summer on longer days, if it only needs a few hours to dry, the hardest part is the things that need like 24 hours plus, I can't run it at night!

    I’m going to make the mushroom salt today, I’ve got some mushies I dehydrated a while back. Do you get your Celtic sea salt from honest to goodness? And do you have an affiliate code with them?

    • @OurSmallFootprint
      @OurSmallFootprint  Před rokem +2

      I do, and no, I have a wholesale account, I don't think they do affiliate codes, but because I have an ABN when I buy I get wholesale rates so long as I buy over $500 worth. Though their pricing is pretty good on Amazon I found! and free shipping if you are prime, their stock can be hit and miss on there though.

    I have a question, does the Rosemary make the salt taste like Rosemary? I ask because I love the flavor of Rosemary but I do not like the actual herb in my food! (hope that makes sense) would letting a salt sit with Rosemary in it make the salt then flavored? (If you happen to know)

    • @OurSmallFootprint
      @OurSmallFootprint  Před měsícem

      It theoretically should, because if you let salt sit with vanilla in it, you end up with vanilla salt and I can’t see why that wouldn’t be the same, the salt is going to draw the oils out of the herb/spice and therefore flavour the salt!
