For anyone that didn't see an earlier comment. If you have an extra scoby from your favorite vinegar, dehydrate it crispy dry, grind it really fine and add it to salt. It makes a great pop corn seasoning in particular.

When I'm grilling, I put a pie pan of salt off to the side. It takes on the smoky scent. Handy for times I cook burgers and such on the stove.

Thanks again for more inspirations. I want to grow mornings and stevia as house plants. I do use my dehydrated veggies as seasonings. Carrots, bell peppers, hot peppers, garlic and onions for salad seasoning and as rubs and add the salts later. Sometimes it makes good tea too. I usually process in a blender to a flakey consistency.

My first spice mix from a few years ago came from all the favorite seasonings and spices we like on our grilled chicken thighs. It works on other things too, like baked potatoes. Equal parts of Onion powder, Garlic powder, Paprika, Salt. 1/2 part of lemon juice powder. 1/4 part of black pepper and sugar. 1- 2 tablespoon of Turmeric.

This recipe is called season salt but you could make more blends as well. I went through my cabinets full of seasoning as part of pantry challenge and did some diy blends
Season salt 2 cup salt, 1 cup garlic, 1/2 cuo black pepper, onion and paprika
Diy greens and chicken season is 2 cup salt, 1 cup garlic, 1/2 cup black pepper, sage and paprika

Not sure of the ratios yet but I want to make a homemade tamarind based sinigang seasoning mix to avoid the MSG in the store bought ones. The other ingredients are salt, citric acid, cane sugar, onion powder, tamarind powder, tomato powder, and garlic powder. They also had rice flour to theirs likely to make it thicker. To make the hot version add chili powder. That it the only way to get my son to eat most vegetables. I don't have all of the ingredients in bulk yet and I need to pick up more jars. Other things are higher on my priority list at the moment. I guess I'll try equal amounts of everything except the salt and sugar since you often need way less of those to get the desired results. Too much of either is usually tastes terrible. I'll get input from my sister and my sister-in-law since we all love the hot version. That would be easy gifts for the people who love sinigang which is the majority of my family. Sometimes the soured meat throws off people. But it's not a spoiled sour. It's similar to lemons, limes, etc.

Yes, you can cut back on the salt but keep in mind, you are already mixing in other spices so the over all salt content is lower. Also know that if the low sodium is out of concern of high blood pressure, salt is not the problem and getting a good mineral rich salt is not only lower in sodium content, it will actually help lower a high blood pressure
