I have a twist on this recipe. My mother was born and raised in Naples Italy. The way she always made this dish is that she added onions to the garlic and olive oil. I never knew there was another way to make it. You must try it. Just slice up one onion and added to the garlic and oil mixture. It takes this dish to another level. It is amazing
The best! Absolutely anyone can make this pasta. Just like you Caroline, it is so much a part of my growing-up. This is what my Mom would whip-up for us 7 kids when we'd get back home from somewhere starving and wanting to eat pronto. For my parents who came from a small town in the mountains of Calabria, during their childhood (the Depression and WWII), it was 'poor man's' food like this that kept them alive. My Mom would always put Parmigiano Reggiano on it, but when my parents were young they could not afford it. So, instead they would put seasoned bread crumbs on it (in Southern Italy breadcrumbs were known as the poor man's substitute for the expensive Parmigiano Reggiano) It's dishes like these that are easy, fast, economical and DELICIOUS! Thank you for sharing this one...and now I'm going to make myself a plate of aglio e olio. Buon Appetito!
Total go to dish. I remember my Mom making this when I came home from the hospital. It literally healed me. And I didn’t even gain a pound. Must be the love that was poured into it!❤ Delish😋

Ok I just attempted this Caroline…I should have made sure the oil wasn’t as hot when I added the garlic. I took it right off the heat but it still sizzled for a bit and I think cooked a bit too fast..It was still amazing…loved it by it self and with some truffle cheese❤ Excited to make it again.

I made this after watching you make it and I used garlic powder instead and still yum but had left over so placed in frig and last night my adult daughter who is picky about what she eats found it (she has autism and is blind) and she tasted it and ate it😳I was so shocked but also happy now we have something new she will eat so going to make more of what you show it’s so good. Caroline you have no idea how entertaining your family is. I love watching you cook. I am trying this recipe in about 30 minutes :) You make it look so easy. I am making baked chicken to go along with it. I am not a great cook so as a fail safe I made a few beer brats just incase my pasta with oil & garlic doesn't turn out lol. FYI: the best giveaway would be a day in your kitchen with you teaching the winner your Italian cooking!!!

I make something similar to this but I use butter an garlic and garlic salt . Fast and delish. Also sometimes I may add shrimp for the people who must have a protein!😊

I've done that, as well. The rest was exactly how Caroline prepared it. However, I don't use as much garlic.
