Pasta and potatoes recipe by Caroline Manzo (aka Pasta Patate) | Easy 10 minute Italian recipe

- You ever have one of those days where you're just wiped out and want to make something quick, hearty and delicious? May we humbly suggest "Pasta Patate" -- pasta and potatoes in marinara sauce.
THE RECIPE
INGREDIENTS
-the first step is to watch our marinara sauce recipe video (and if you already did -- and bottled some at the time -- go ahead and just watch for the joy of it): • Marinara sauce recipe ...
-1.5 cups chicken broth (you can use vegetable if you prefer)
-One 14.5 oz can of fresh cut potatoes - cut in 1/2 or 1/4 - your choice (this is for the super-fast version; if you want to take your time, use fresh potatoes)
-1 large rib of celery, diced
-1 small onion, diced
-1/2 pound pasta of choice (rigatoni or shells are great!)
-Grated cheese to finish
-Salt and pepper to taste
-some olive oil
INSTRUCTIONS
-Boil the pasta
-sweat the onions and celery in olive oil
-add the marinara sauce, let heat for a few minutes
-add the broth, let heat for a couple minutes
-add everything else
-drain the finished pasta, put it in a bowl, pour the sauce over it, and serve

Caroline this reminds me of my mothers potatoes and pasta. When I was growing up we had pasta almost every night. Not good, I know, but my mother had a 5th grade education and she is the best cook ever. I can just smell that pasta sauce coming out of my iPad. Lol. I know what I’m cooking tonight! ❤

Love your recipes as they are very similar to what I ate as a kid and cook myself today. I think the biggest compliment I ever got was from my now late Italian mother who told me I made better meatballs than her and LOL I always used her recipe but added one ingredient she didn't that I learned from Rachel Ray which was adding a heaping tblsp of tomato paste to the mix. And, I also use Tony Danza's trick of lightly coating my meatballs with flour before frying them which gives a nice crisp to the surface of the meatballs and helps keeps the inside juicy. The joy of cooking is there is always something to learn from others who share the same passion for cooking. Much success with your channel.

Definitely going to try this 👍with a large busy family I need fast wholesome recipes like this, especially on nights when my family gets home at different times .In Ireland our go to ingredient is Potatoes but until your channel I never thought to mix it with pasta so thank you Caroline .ps I’m so glad when you didn’t grab some parsley etc to garnish it because in reality who does lol 🍝
