Worth brining the chicken in seasoned buttermilk for a day before doing egg wash and flour dredge, will help the crispy outside expand and get that southern cooking flavor.
I love watching him not only cook but the talking between the other guys in the kitchen. It reminds me of when I worked in a restaurant and how we would talk to each other, I do miss it.
