Miso Ramen w Pork Chashu. Simple Version.
In this video, we walk you through the simple version of Miso Ramen w Pork Chashu.Below are the required ingredients and method to be followed.
For Chashu:
2-3 lb Pork Belly
1 cup Sake
1 cup Mirin
1 cup Soy Sauce
Ginger, Garlic, Green Onions
Sous Vide for 11 hours at 160F. Before serve roast them using torch. Or broil on high for couple minutes.
Eggs
Put eggs in boiling water and cook exactly for 6 minutes, transfer to ice cold water and wait few minutes. Peel and use marinade from Chashu. I made Chashu overnight and then marinade eggs for few hours in the morning.
Miso Broth
2 cloves garlic
1 inch ginger
1 tbsp toasted sesame seeds
1 tbsp sesame oil
4 oz pancetta or bacon
3 tbsp White Miso
1 shot Sake
4 cups Chicken/Beef stock
1 tbsp Hot Sauce
Salt/Pepper
Fry pancetta, add sesame oil, grated ginger, garlic, sesame seeds. Cook few minutes and add Miso paste, sake, hot sauce, and broth. Simmer couple more minutes
Cook ramen noodles for about 3-4 minutes
Toppings
Shiitake Mushrooms
Green Onions
Sweet Corn
Nori
Fish Cake
