Bro, the books were written in the 1990s. As a another guy said, the Rainbow wasn't a big symbol for homosexuality. Also, the rainbow in Westeros is the sign of the Seven, just like the crucifix is associated with Christianity
He wrote 3 of the books in the 90s long before LGBT's association with the rainbow colours. As humans we need to reclaim the rainbow!

One of them was called the handkerchief code - if you saw a man with a handkerchief sticking out of their pocket it meant all kinds of things. It signified a top/bottom preference depending on which side the pocket was on and different colors meant different adult activities. People seem to think that history didn't exist before they were born.

Edit: GRRM apparently said it has nothing to do with him being gay. Rainbows have 7 colors, the faith uses prism windows. Meant to represent the faith in an abstract way.
I mean that's definitely the in universe reason, the out of universe reason though IDK, GRRM himself complains that he apparently didn't make it obvious enough that Renly was gay, which caused a confusing controversy when the show just made it clear and a bunch of book fans were like "Why did they change him to gay" and sent him letter complaining about it, meanwhile he was just like "Wait you guys didn't pick up on the fact he was gay in the books? You never noticed? I gave him a fucking rainbow guard for fucks sake, and had to pretend I didn't know what it meant/implied in real life, you guys seriously thought the reason was just cause he was ultra religious? You serious?"

One good thing about the show is that they gave us more insight into events that the book didn’t cover due to POV limitations

While I don't totally disagree, it is worth noting that Renly had a serious chance of winning the war without stannis (if not for the magic which most in Westeros believed to be fiction).
He definitely had the greatest forces amassed out of all of 5 kings and they were not all just drafted farmers.
Don't quote me on the numbers exactly but I believe he had around 80-100 thousand footmen many of which would be professional stormlander men at arms AND around 20-30 thousand cavalry consisting of many knights and freeriders.
Not saying he would've won but to say it was foolish to try definitely ignores his own advantages.
