- Escarole and beans (aka Scarola e Fagioli) is an easy, Italian comfort food at its best! This is a simple, comforting, classic Italian dish that comes together quickly and will warm your soul from the inside out.
I love to serve this topped with Parmesan cheese and red pepper flakes along with some crusty sourdough bread on the side. If you want to keep this meal 100% plant-based, sub in vegetable broth for the chicken broth.

ESCAROLE & BEANS
1 tablespoons extra virgin olive oil
6 cloves garlic chopped
Pinch of red pepper flakes
1 lb. escarole washed and chopped
3 cups low-sodium chicken broth (can swap veggie broth)
1 teaspoon dried oregano
1-15 ounce can of Cannellini beans
sea salt and pepper to taste
parmesan cheese for topping
Heat olive oil in a Dutch oven over medium heat. Add in garlic and red pepper flakes and saute until fragrant.
Toss in escarole along with 1/2 cup of broth, dried oregano, salt, and pepper. Stir well, pop on a lid, and simmer for 5 minutes.
Remove the lid, pour in the beans and the liquid from the can along with the remaining chicken broth. Simmer for 10-15 more minutes, or until the greens have wilted down and are tender.
Ladle into your favorite bowl and top with freshly grated parmesan cheese, red pepper flakes, and an extra drizzle of olive oil.

This soup is soooooo delicious! The key is the garlic. I think I ended up throwing in 8 cloves altogether. A couple were stuck together when the peel was still on. So delish! I also used veggie broth and a drop of lemon juice at the end.

I make this recipe often but with no packaged broth. I use plain water. All the ingredients make lots of flavor. That’s how the original recipe is take it from me I’m old and I also make it with other green such as spinach or kale or broccoli, rabe. Whatever is in season or whatever I have on hand.

Escarole isn’t available where I live, is there anything I can substitute it with?
You can try baby bochoy or the bochoy. If none try organic baby spinach.
Kale or swiss chard could also work.
I couldn’t find escarole at the grocery store can another leafy green like kale be subbed?

I usually dry each salad leaf separately with a paper towel but it takes a really long time plus it's a waste..
Hi Dani,this soup looks good and I look forward to making it may want to add some spinach to it also but I’m trying to lose weight again because of my health and I’ve started basically a Mediterranean diet lifestyle which it appears like most of your recipes would follow those rules except for any white rice I would trade out for organic whole grain rice or noodles whole-grain noodles wouldn’t you agree to that?
I have a boatload of romaine (stronger than the grocery store variety) going in my garden. Would that work in place of escarole?

My local grocery store doesn’t have escarole, what are other options I could use? I was thinking spinach.

I followed the recipe exactly and found it to be bitter. I’m sorry I didn’t blanch the escarole first.
