Also, I love this episode because there’s a good focus on both of you, and it was a more multi-sensory video. When you asked Ago to smell what you were cooking and he said it smelled exactly how he remembered your Nonna cooking it (smell). There was also a good number of shots just focused on the food and the sound of sizzling (sight and sound), you rubbing the bread on the olive oiled pan (touch) and of course…the tasting part.

I love escarole...rather difficult to find regularly in Florida. Publix usually has it but so expensive here compared to NYC.
My nani made soup with it, using white beans, chicken stock and mild sausage. You put the 'scadole last right before you served it. Delicious Italian American comfort food.

I still make this, and I remember my grandmother making this. She would make it as a side dish or use it to make escarole pie instead of spinach pie.

One of our favorite restaurants sadly closed down served this sautéed w steak soo good
In dutch it's called Andijvie and it's also good just fried in some butter cut up. It combines really well with chilli, as a child the way I learned to eat sambal was to eat a spoon of andijvie (fried with a bit of beefstock cube) and get a tiny bit of sambal with it. I've never learned to deal with spice very well but I still love it with this little bit bitter green.
So based on that my guess is it's Endivien in German.
@@c.w.8200 Probably yes, it's a common vegetable that used to be larger when I was a kid, one head would full the whole sink as we soaked it to wash. Now the heads are like the video, kind of small. But they contain less sand and little bugs.

Maybe try some dandelion greens? Free and plentiful if you have a yard.😊
