Today we're making a classic Italian beans and greens soup. I used escarole, but you could easily sub spinach or kale if escarole proves too hard to find. I hope you enjoy this escarole and beans soup!

James tried my beans and greens soup then made me test some beanboozled beans. The print recipe and ingredients are always linked right in the description. If you enjoy these videos please like and share them. That really helps us out.
Your son reminds me of my grandson so much. It’s interesting though because I salt everything, but my grandson always asks for more. Maybe it’s something with growing boys. 🤷🏻♀️ Anyway, I’m going to make this recipe today, and I can’t wait to try it! 😁Thanks 🙏🏻
Made it, and it turned out great! Thanks
It's not often I laugh at cooking videos, but the booger scene cracked me up.
Thanks to you, your son is becoming such a great food critic, and possibly a chef in the future!?
Love the relationship you show with your son who obliviously is a fine young man. Good dads are hard to come by. James is blessed for sure. Love you guys!
I love how down to earth your content is. There's no "pro chef" or "you have to do it this way" in any of your videos and it's just a comfy atmosphere
James's giggle is 11/10. You all are just a warm, kind, and lovely people! I love this recipe. I'm always in the mood for a bowl of delicious beans. Thanks, Jim and fam!
I can't wait to make this one, thank you for the effort! I love the way you are with James, treat him like an adult instead of a kid. I agree with not putting as much salt in, I do the same, because you can always put more salt, but you can't take it out when it's too much for someone.
To James’s point, an option: if you remove the rendered, crisp pancetta at the beginning, you can then use an immersion blender on the potatoes/beans before you add the greens. Thus you’ll get the creaminess James wants without adding cream, then garnish each bowl with some of the reserved pancetta.
Sounds good… also keeps it vegetarian 🌱
@@sahej6939 and not tasting as good
You can keep some of the potatoes and beans separate or unblended for extra texture.
@@susugam3004 Wrong! It tastes just as good. But you can be close-minded if you like
@@sahej6939 ummm, you're still using pancetta, so not vegetarian 😂😂
I can’t say it enough how much I love your family!
Love this soup! Btw, quick fix-it tip. If you need to thicken soups or sauces to correct a mistake, sprinkle instant mashed potato flakes in and stir until you get desired consistency back. Just do it SLOWLY and wait a bit between additions, because it takes a bit to reach full thickness.
I am insanely addicted to this channel! Awesome awesome cooking. I am Italian and really love seeing your generation continue the legacy of great Italian cooking at home. Kudos!!! Ps…if you want to prevent spillage from your measuring cup, hold it up above the pot by about 6 inches and then pour it. Pouring too close to the pot causes the measuring cup to pour from an angle that causes backflow.
James has such a refined palette!!! The both of you are great together!! Love his need for varied textures in soup.
Your son is so sweet. Such a beautiful family hope you guys are doing well ❤❤ soup looked amazing .
I love this soup! My mom made it often and I have memories of her soaking the escarole in the sink and then drying in a large colander, salad spinners are such a great invention, lol! Another thing she did with escarole was sauté it with olive oil, garlic salt and lots of hot red pepper. That was also soo yummy! She used to eat it on a nice crusty piece of bread. Love watching you cook the recipes I grew up with and putting your twist on them! I
I make some kind of soup every week, and it’s always good. But I made this soup tonight and my husband said that this may be “the best I’ve ever made!” Thanks Sip and Feast 😊
This interaction with your son is priceless. The bantering is gem! The receipe I still have to try great job guys.
I love your relationship with your son ❤️ Made this last night and added a small pinch of red pepper flakes. My family LOVED IT!
This is another one of those dishes that is so much more than the sum of its parts. James' idea of crunchy pancetta made me think of something that I make. It's focaccia, and I add some sun dried tomatoes, fennel seed, red pepper flakes, sauteed onions and garlic. I always make tons extra because it goes so fast, so I end up cutting some of it into cubes and putting it on a sheet pan in the oven on low until they're crunchy. It makes the best croutons ever and I think they might add the perfect crunch to this wonderful soup. Thanks for reminding me of this soup from my childhood!
Sounds delish💞
There is nobody that rates their own cooking the way you do it, I love it.
I just discovered your channel a week ago, and already I’m hooked. I am now a subscriber, and also made my mom subscribe. I love the style of your videos. More importantly, you create delicious looking food in the simplest way. Your family interactions are so charming! You’re the real deal!!
I appreciate the comment, and welcome to the channel!
You & your family are wonderful. I’ve tried many of your recipes now. I’m going to try this one too. It’s had me try things I’ve never eat before. I love it.
I love cooking with scarola. I think it's more widely available here in Italy during the winter and into Spring. It disappears in the Summer. I also use it as a fresh salad or at Easter cooked with fava beans and artichokes. I have never made this soup, but will definitely try it! Thanks for the inspiration!
It's my all-time favorite soup. I never tried it with pancetta. Looks amazing
My son told me to watch you and he knew good food. He died in June "22 of Graves Disease. I love your videos ad still watch faithfully. His birthday is coming up on April 4th. I miss him terribly. Thank you for your videos.
I'm so sorry for your loss, and am honored that your son enjoyed my videos and that somehow you can feel a connection to him through them. Thank you for sharing with me.
I really honestly like how you teach us how to cook the recipes
Easy to follow
Thank you 😊
Thank You for your videos and all the work that goes into it. As a retired teacher I think it’s important and fantastic that you allow your audience to see mistakes and more importantly how to fix them. Keep up the great job you and your family are doing. Much respect, appreciation and blessings to you and your family.
What an adorable family and the best recipes - easy to follow, very clear instructions and anything I have ever made has come out really good. I'm from an Italian family so it's nice to find authentic recipes like this. I give this channel a 10 plus plus plus
Great teaching because you are able to translate and infuse your intuitiveness into the art of cooking in a way that is empowering. It’s like, hey, I can do this and it’s going to taste fantastic.
Thanks
Love your videos - you're so clear about the ingredients and the process - very easy to follow.
This looks delicious! I have made quite a few of your recipes and have never been disappointed. Thank you!
Just wanted to say, I love your stuff-- I think you, Chef John, and Stephane are the class of CZcams chefs.
I was planning on making this today. This is a sign. Yours looks delicious!
I have tried a couple of your recipes and the flavor is there without having to use additional spices. I’ll be making this soup for sure. Your chili is amazing, my son thought it was the best I’ve ever made, so thank you.
Delicious!!! It's a cold evening and this would hit the spot. Wholesome food with good natural ingredients
Great content James! Long time watcher. Love you and your family, and of course your recipes. The production of the videos is exceptionally well done, and noticeably improved as of late. Bravissimo! Continua così! 💚🤍❤
Love your videos! These are the recipes my Italian grandma, and my mama made, especially the white bean and escarole soup! Unfortunately I live on the west coast and I have to use kale and it’s not bad but there’s nothing like that beautiful tender escarole! 🙏👏💕🥰😍
I'd kill to get escarole!! I have to suffice with kale. Maybe I'll try growing escarole this year????
I live the way you describe all the recipes!! You make it look so easy even I could do it!!
Love the relationship and respect between you and your son! Beautiful.
I often blend up a can of canilenni beans and add to soups to make them creamy thus eliminating all or some cream.
I love James. He’s the best and another great video and super simple recipe from you. Thank you.
Oh my kind of soup, I grew up with kale, my father was a gardener& we were blessed with home grown food
Thank you 🙏
I’ve even used smoked Polish sausage before and that’s good, too - it has a lot of fat and smoky flavor. I like your idea of using celery and onions, which I’ve never used for beans and greens, so I think I’ll try that.
Excellent. I was just looking again at this recipe, and you've reminded me I have some cured chorizo in the freezer. That's tonight's dinner sorted!
Hahahaaa i enjoyed so much the last minutes of the video, that James gave you the candy. And the resipe was great as always!Much love to you all!
I’m northern Italian and we used to use spicy sausage and fennel as well as beans and escarole and called minestrone bianca
Always a joy! Many thanks...
Made it tonight for dinner so there would also be enough for supper tomorrow after big Easter brunch!
Fabulous soup, highly recommend to everyone. Escarole was easy to find here in Southern California.
That looked scrumptious, I love a good soup in the cold months.
Watching this before dinner and it looks so yummy. Glad the taste tester enjoyed🥰🥰🥰🥰
Thank you for sharing this recipe!and it looks delicious 😋!
The official taste tester's giggle is priceless. 🙂
I have those same measuring cups and they always do that to me, too. I think it’s due to the well rounded lip of the rim. If the rim had a sharper, more defined edge to it, I don’t think it would do that.
Great looking recipe. I’m definitely going to give it a try.
Mine turned out delicious-- thank you for your easy instructions !
This soup looks right up my alley! Love it.
Good for you, young man! I am impressed
Just made your soup! Absolutely fantastic recipe and the way you and your family present the recipe is terrific! You should write a recipe book!
Looks like another winner!👍👍
I have the SAME problem when I pour from the large measuring cup!😂
saw the title and thought it was going to be Italian Wedding soup. This was good too and I enjoyed watching the video, as I always do.
EXCELLENT VIDEO...
Thank you for sharing this.
I can’t wait to make this!
This us very similar to how I make my version of Zuppa Toscana, which started out as a copycat Olive Garden recipe that has evolved over the years.
I use bacon and Italian sausage, some red pepper flakes, and kale instead of escarole. And I add about a cup of half and half to the pot.
Zuppa Toscana doesn't usually have the beans, but mine does. They are a game changer.
My local Italian restaurant makes an amazing beans and greens soup but there's no potato at all. But there so SO MUCH garlic and their broth is amazing. It really feels healing. Happy to try out this recipe.
Hello.Always a pleasure watching your video. The dishes always present nicely & look really delicious. Thank you for sharing your recipes.🙂👌👍👍
I love your interactions with your taste tester❤
James killed it with that crispy pancetta bit. I am also a big salt guy.....or at least I used to be until the blood pressure meds haha.
One of my favorites. So good.
I love soups, and yours look as good as my mom's. She's gone now, but I can close my eyes and still smell her soup.
There's a soup just like this one from Spain and they use Mustard greens..It is amazing! Only difference, which is a super nice touch is they add like 1/2 t. of Smoked paprika. Gives it a nice touch. Instead of pancetta, they use Smoked ham hocks! Really enjoyed this video! Reminds me of that Spanish soup❤❤❤
I love watching you cook with your son. It's so awesome! #Cheers
1 million subscribers soon! Don't give up, cheers 🍻🍻
I love this channel so much. You all are so sweet!
Love this soup! Any leftovers I cook down the broth and serve it as a side vegetable platter with cutlets..
"No offense" lol This soup with a nice crusty bread sounds like comfort food! Thanks!
Delightful video and soup looks bomb!
Your boy is growing up.... Loved the pasta fagioli soup, can't wait to try this one...
First time viewer; will def ck in again. The recipe is on my to-do list. Based on James' review, I think, I'll be using an immersion blender a bit and add a tad bit of half-half or heavy cream to the finished dish. Thanks for sharing; loved the interaction of you guys!
Y'all Be Safe!
I have made this several times with the little meatballs...so good!
I really appreciate your recipes its funny they remind me of my grandma cooking 😀
I swear I can smell that soup cooking. Looks so good. Smells good too.
The soup looks delicious. The jelly bean tasting was hilarious and my favorite part 😂
A suggestion: Use a tall slim pitcher when pouring in the stock to prevent spillage.
love this soup!
What I really like about this kind of soup is that the olive oil and the bean starch eventually emulsify which is also an indicator that it's done cooking. Give it 20 years and I guarantee that James will rate it a 10! 🙂
Another heartwarming video and recipe. You guys rock. My grandmother used to make a similar recipe for my grandfather. He loved escarole. Great soup for the soul and the common cold. 😉👍🇮🇹🇺🇸 Enjoy the low BP while you can, James! 😅
A high probability that you can’t find escarole outside the MY/NJ area .😂😂😂😂😂
I owe you an apology I had to go to 3 stores before I found the escarole. My wife loved the soup. She said she dreamed about it. Took some to my mom she said she couldn’t believe something so simple could be so good. Planning a dinner party in a few weeks and this is going to be my starter.
Great recipe and love your taster❤
Love this Recipe!! Your son “Rocks!!” Great Tester!! Love his Suggestions!! You’re an Awesome Cook!! Love How you “Keep it Simple”..& Explain things!! I’m a new sub!!🙌🙌💗🙏🙏🥰
Can’t wait to make this soup!!Yum!😋🤗🥣
This looks amazing! Maybe for the crisp, besides pancetta, would be homemade breadcrumbs/cubes.
we have escarole in Chicago but I like to use swiss chard in this soup too... delicious!
Great video 🙌. Blending a portion with an immersion blender may help with the consistency.
This looks so good! I’m going grocery shopping tomorrow, so I’m getting the ingredients for this. I’m sorry, I laughed when you spilled the stock hahahha
My 16 y/o son heard the beginning and asked what are you watching??🤣🤣🤣 you guys are great! I need to try this soup too because all your recipes are fantastic! Thank you❤
This soup is very much like Galatian soup (in Cuban speak, it's called Caldo Gallego) and it's amazing. The only difference is that typically, the green that's used is Swiss Chard and a salted pork called UNTO, which is hard to find outside of Miami.
Recently found your channel, so wholesome and the recipes are amazing! Made this tonight for my sick husband, he’s cured 😂 thank you for great recipes and content!!
When you're pouring the stock, lift your elbow when you do it (same with any pitcher...prevents the spillage).
Finally, a chef who pronounces 'carrot' correctly :) Thank you!
I was hoping to find out where you got your flat edge spoon from in this video ..I love your videos especially when your family is with you !!
Great recipe! To avoid spilling liquids while pouring try putting the back of a spoon against the spout while pouring. It directs the liquid better.
I would add some nutmeg. It goes so well with greens. Great looking soup. 👌
Hi....if you out some butter outside the measuring bowl spout it should pour without dribbling. Love your videos!
Omg I just left a huge comment on this, with the technical explanation; you got it in one sentence! Well done.
Hi, I use sausage for this soup but next time I’m going to use pancetta instead. Love your channel we are an Italian family and love all these recipes. Thanks 😊
Me too.
Looks delish! I love your taste tester )
You guys are so adorable.Could pare it with Brie or feta incrusted bread also and and a couple tablespoons of Greek yogurt maybe or buttermilk for creaminess maybe some white pepper as well. But the greens would of never thought of doing that , that’s a super good tip I’ll have to try very soon.
