    Today I tried this sambar.It came out very tasty.superb recipe.My husband and my son enjoyed it a lot.As they don't like pump mpkin I substituted with extra amount of dal.Thanks a lot

    The idea of boiling and grinding yellow pumpkin alongwith the dhall is I think the secret of the taste. Awesome madam tku soo much. Will try it out surely and let you know the outcome. Am sure it will be good anyways. Hats off to you and ratna cafe

    All correct but hope this will not near classic Rathnacafe Sambar.
    I want that sambar once upon a time long ago nearly 4 dacad back.
    Now a Rathana cafe saamanar also not good.

    When you grind the fresh sambar masala, do we need to add a little water to make it a paste while grinding or just dry grind the ingredients?

    This way of presenting without bouce is very very nice. Recipes are good. My grandmother, mother and now me...are making all these recipes and we enjoy cooking good tasty food. Your method and ingredients is almost the same as ours. However I do watch your videos.
    As always, my only problem is your "welcome to subbus kitchen " tone and pitch and speed. Hope y can change that. Best wishes from Bangalore

    In Ratna Cafe itself, the Sambar Masala is made in bulk. This might be in kilograms, where they pay attention to the exact quantity of all the spices. This is a closely guarded secret, which will taste same everytime it's prepared. Moreover, they make only the daily required quantity of that powder to retain the freshness. Commercial success is due to this, and that's why we have so many people quoting Ratna Sambar recipes in YT.

      You can use it for both.. It goes very well with white rice as well as with Idly.

    How many times do we add heeng in preparing sambar

      Generally we add once either during tempering or after adding tamarind. But here we are adding thrice. I not sure of the reason but I got this recipe from a FB group and followed the instruction word to word and It tasted amazing exactly like Ratna Cafe Sambar so I shared the recipe as it is. I know its a lengthy and complicated way of preparing sambar but its worth for its yummy taste. also with the ingredients I mentioned, we get so much of quantity of sambar that we can serve for atleast 10 people. If we have guests, this is an ultimate sambar to treat their taste buds,

    It should taste great ! But 3 times hing, 2 times phodni. Mustard 2 times. Fenugreek 2 times. 2 times pumpkin. Can't believe that restaurant will do all these steps so meticulously. Anyways I will definitely try this.

      One elderly uncle shared this recipe in a FB group and I just followed his instructions word to word and believe me its so yummy and so authentic. I was also wondering why the hing, fenugreek, mustard twice or thrice. I guess they will prepare the sambar masala, onion-tomato mixture and tamarind mixture separately and whenever the order comes they will mix everything, boil once and give and thats why they added it separately in all the 3 process that way the aroma and flavor is retained. Though the procedure is long and complicated, Its worth the effort. I had it with Idli/dosa and also with vada and rice. With all those combinations, this sambar tastes divine.Thanks to that uncle who shared this recipe.

      No.. i wouldn't recommend that. Yellow Pumpkin will bring nice color, flavor and taste. Please use yellow pumpkin only.

      Yes it does. Dry coconut (Kopparai) adds more flavor than fresh coconut.
