Ratna Cafe style Tiffin Sambar|Idly sambar recipe| Sambar for idli, Dosai | dosa (#88)

    www.amazon.in/shop/happyhomem... Tiffin sambar is served as a side dish along with idly, dosa and Tiffin varieties. The preparation of freshly ground masala gives a unique flavour to this sambar.
    Ingredients:
    For masala:
    Coriander seeds - 1.5 tblsp
    Red chilly - 5
    Kashmir chilly - 2
    Gram dhal - 1 tsp
    Fried gram dhal - 1 tsp
    Fenugreek - 1/4 tsp
    Fry the above in 1 tsp of oil till golden brown, cool and grind into a coarse powder. Our idly sambar masala is ready.
    For sambar:
    Pressure cook the following for 2 to 3 whistles and mash well.
    1/4 cup soaked and washed moong dhal
    2 tblsp - Tuvar dhal
    1.5 cups finely chopped pumpkin
    A few stems of coriander
    Turmeric powder - 1/4 tsp
    1/4 tsp - ghee
    To temper and cook:
    Ghee - 1tsp
    Mustard - 1/4 tsp
    Cumin - a pinch
    6 Small onions
    2 tomatoes
    Asafoetida - a pinch
    1 green chilli
    Add the cooked and mashed dhal, 1 cup of tamarind extract from a small gooseberry sized tamarind. Let it boil, add the masala powder. Let it boil once again.
    Switch off and add a pinch of jaggery, coriander leaves, curry leaves ,1/2 tsp Coriander powder and 1 tsp ghee.
    Enjoy this sambar with idly, mini idly, dosa, idiayappam, aappam, pongal and upma varieties.

    Mam..I tried this recipe today .Was amazed like anything.I live in the US and always missed triplicane Rathna cafe sambar .I came across your video accidentally and gave this a try .OMG me and my husband were taken aback by the taste of it.     Your title says " Ratna Cafe " sambhar. How is this different from other sambhars? What is the secret ( if any ) ingredient that you add to make it taste like "Ratna Cafe" sambhar ? I used to have Triplicane Ratna Cafe Sambhar idli every day in my student days....so I want to know.

      Hi. The order in which we add the spices, the time of adding during cooking, the process we use, all makes a difference. It's in these small nuances that you get tasty food. The same ingredients when put together in a cooker and cooked, gives a different taste than the food cooked the same way in open method. Tried recreating the taste after a lot of trial and error. This method gives a "nearto" taste. You can scroll down and look at the comments of people who have tried. Hope I have answered your question.

    Ur tiffin sambhar is a big hit in my house. There was a bet between me n my husband for how my sambhar will turn out n I won 2000. All credits to u 😍 though I didnt have pumpkin n tried it with remaining ingredients. One small suggestion in video u have mentioned tablespoon for channa Dal n Potukadalai in description it's mentioned as tea spoon. Please correct me if I'm wrong. Nandri 👍💕

      Sujatha Raj Hi. When I tried with coconut I got the taste of araichuvitta sambar. I felt that it tasted better without coconut and tasted like ratna s. If you want you can add along with spices, roast it slightly and grind.☺

    Good recipe. But . At 7.45 you added sambhar pdr. What is this brand sambar pdr....again finally you added tiffen sambar masala that was prepared. So 2 kinds of sambar pdr is it.

    Madam, is there a way to avoid pumpkins. Most of the recipes recommend pumpkins, but I live in a land where pumpkins are scarce. Thankyou

      Kanaga Ravi Any vegetable can be used. Brinjal, onions, potatoes are generally used for Tiffin sambar.

      Heaven J Hi. Though the ingredients are similar, making it instantly gives a nice flavour to the sambar podi. Otherwise they are almost similar.☺

    Just a suggestion...First tell the pre preparations first...after preparing masala, u r telling that u used 30 mins soaked dal....may be u should all that first...thank you....

    Good try madam. They use different process. They use only thur dhal and directly getting from Indore. The success is the proportion of thurdhal sambhar onion and tomato with their special process. Good try.
